About this Cook
I'm a wife, mom, teacher, and coach. I love cooking for my family and friends, and generally, people really enjoy my cooking. I thoroughly enjoy spending time with my husband and two sons, as well as running and working out. The older I get, the more I tend to experiment with new hobbies. I love making homemade things!
My favorite things to cook
While not an avid baker, I most love to cook a variety of different foods. I love to add fresh veggies to most dishes, although my boys (including my husband) are all very picky eaters. That can pose as problem when adding veggies, but proudly, since I've met my husband, his palate has expanded quite a lot. I'm mostly concerned with flavor, as there is nothing more disappointing then tasting a dish that doesn't have any, well, taste. I love to experiment with foods, and even though budget does limit me some, I generally never follow a recipe and only use them as a guide.
My favorite family cooking traditions
Honestly, we really don't have any real "traditions" in my family. The only thing that I am asked to make every single Thanksgiving is my mom's "Scalloped Corn." My mom made it every single year up until she passed away in 1993 and since then, I took over making it (at age 11). I haven't used a recipe in years, and in fact, the recipe that was left to me only had a few ingredients scratched on directions at all. While I've made it for the last 20 years, I don't think I've ever made it the same twice! Lol!
My cooking triumphs
My triumps include any time that my husband gives me a thumbs up. There is nothing that gives me more joy than hearing that whomever I am feeding enjoys my food. :)
My cooking tragedies
I once tried to make a pasta dish using leftover brats. It was terrible!

Best Chocolate Chip Cookies
I will NEVER use another Chocolate Chip Cookie recipe again! These are by far the best I've ever had!

Chicken Cordon Bleu I
I altered this recipe according to others' sugguestions. I only had sandwich meat ham, so that's what I used and it tasted really good. I also didn't have swiss cheese, so I used pepperjack, and that turned out delicious, as well! After rollin up each serving, I washed them in egg wash and dipped them in bread crumbs and added a small pat of butter to the tops before baking. I made the cream sauce (1 can cream of chicken, 1/2 cup cream cheese, 1 tbsp lemon juice), but I personally don't think it was necessary...personal choice entire! Great husband said he'd definitely eat it again!
