Easy Granola Bars
I guess it depends on whether you want a sweet, cookie-like bar or one that tastes kind of healthy. This one is a cookie bar. I used 3 c. quick oatmeal, 2 T. melted butter, fat free sweetened condensed milk, 1 c. chopped, salted almonds, 1/2 c. chopped walnuts, 1 cup dried strawberries, 1 cup dried blueberries, and 1 cup miniature chocolate chips. I pressed it in the pan using leftover butter wrapper. As other reviewers recommended, I cut it right after it came out and tried a piece - I had no problems getting it out of the pan, using non-stick cooking spray for baking (includes flour in the spray). I definitely like the flavor combination - maybe I would use less condensed milk, and sub almond butter to make it less sweet (noted in other reviews). Also, increase the walnuts to 1 cup, then decrease the chocolate chips to 1/2 cup. It's whatever suits your taste. Texture seems good - will have to see how it is when it's completely cooled.

Date Filled Cookie Bars
These were easy to make as the instructions were easy to follow. The cookie part was very tasty and had a nice texture - buttery, crunchy b/c of the walnuts and kind of roasted and chewy because of the oatmeal. I only made one change and that was to add 1 teaspoon of ground cardamom along w/ the 1 tsp cinnamon. The date filling had a nice texture. I had never had date bars and was actually skeptical of the recipe but I ended up really liking them. Oh, and the lemon and orange zest really adds a great flavor. Everyone who tried them loved them, and most of them said that it was not too sweet.

Annemarie's Lemon Bars
I made the recipe exactly as is. The shortbread base was perfect. I found the lemon filling to be too tart and/or not sweet enough, and also there was not enough of it. Most other lemon bars I've made had at least double the amount of filling. Also, I didn't really like the consistency of the filling. Other people who tasted them liked them but I didn't. I will not be making these again.
