Simple Peanut Squash

This was a simple, tasty recipe for butternut squash. I used a larger squash, so I had to more than double the cooking time, as well as add extra sugar, butter and salt. I baked it until it was soft and easy to mash. Very tasty!

Peanutbutteriest Cookies Ever

These have such a great peanut butter flavor! I made just a few changes to lighten up a little on the sugar and fat. I used Splenda in place of sugar, and instead of using a cup of butter, I used 1/2 cup butter and 1/2 cup no-sugar added applesauce. They turned out delicious! I didn't have a problem with them crumbling, either. But then again, they're being eaten as fast as I'm getting them out of the oven! Thanks for the great recipe!

One Dish Chicken Bake

Cuban Goulash

This was really good! It was such a unique mix of indredients that I had to try it, and I'm so glad I did. My guy and I both loved it served over egg noodles. It was so easy to make, I didn't change a thing. I'm sure I'll make it again. Thanks!

Chicken Thigh Fricassee with Mushrooms and Rosemary

We really enjoyed this one. I had to make just a couple of substitutions. I used a Tuscan Herb seasoning because I didn't have rosemary, and I actually used regular green olives. And I'm pretty sure I at least doubled the mushrooms. The chicken was so tender, and everything really blended well. Even my ten year old son loved it and asked that I make it every week!

Blonde Brownies I

I've made these a few times now and my family loves them. I leave out the walnuts because I don't usually have them in the house, and I've used both light and dark brown sugar. So easy and so yummy!

Mom's Best Pork Chops

I love how crispy these pork chops turned out. Almost like chicken-fried pork chops. Baked them alone once, second time, I added some cream of mushroom soup to the pan. Liked it both ways. I think I'll try the cracker crust on other meats.

Outrageous Chocolate Chip Cookies

We loved, loved, loved these! Easy to make, and the flavor is great. Just a hint of peanut butter, lots of chocolate. A wonderful soft and chewy cookie. I used margarine because I didn't have enough butter, and they turned out exactly the way I was hoping they would.

Hearty Vegetable Lasagna

My niece asked me to make a vegetarian meal while she was visiting, and I tried this. It was so good! The non-vegetarians in my family didn't even miss the meat. I used cottage cheese instead of ricotta, and it turned out perfectly. I didn't use all of the lasagna noodles, though. I probably could have gotten by with about half the box. I would definitely make again.

Mulligatawny Soup I

My family really likes this recipe. It's easy and quick, and it's even better the next day, when the rice has had a chance to thicken up the soup a bit. I like to add a bit of chopped cilantro to mine. I've made this over and over and it's a hit every time.

Chocolate Chip Pumpkin Bread

Like everyone else who makes this, we loved it too. It was easy, and it made three perfect loaves. I was low on white sugar, so I used two cups white, one cup of brown sugar. I subbed half of the oil with applesauce. Turned out great, I'll keep this recipe around for sure.

Easy Spicy Mexican-American Chicken

This was a hit at my house. I used a combination of hot sauce and taco sauce, I was trying to keep the spice down a bit so the kids would eat it. And they loved it! Luckily I made a triple batch of legs and thighs because four pieces wouldn't have been nearly enough. I've made it several times since, and I don't measure, just dump it all in a bowl and roll the chicken around in it before baking. Delicious!

Iced Pumpkin Cookies

These are a new family favorite at my house. They're so moist and delicious. I over-baked one pan, but because they seem to draw moisture from the frosting, they softened up nicely. So easy to make, so easy to eat. Delicious with a cup of hot coffee!

Pollo Fajitas

I've made this over and over again. I stick pretty close to the original recipe, sometimes using chicken breasts instead of thighs. The family loves it. It's easy and made with ingredients I usually have on hand in the kitchen. It's a winner at my house.

Tacos in Pasta Shells

These tasted great and the family loved them. Stuffing hot pasta shells was a little tricky for me, so I might make again and use manicotti or maybe just dump it all in a pan and make a casserole out of it. Either way, I'm sure I'll be making it again!

Strawberry Rhubarb Sauce

Great recipe, easy to make. I probably added a bit more rhubarb than the recipe called for, I didn't measure. The taste was great, we served this over French toast and it was a hit at my house! I'll be making again this weekend to have with ice cream!

Baked Teriyaki Chicken

My family loved this one! It was so easy and tasted great! I did make one substitution, I used about 8 packets of Equal in place of the white sugar for the diabetic in my house. Next time I might try using low-sodium soy sauce, just to cut down on the sodium a little. I only made 5 pieces of chicken, thighs and drumsticks, and there was just enough sauce, but I basted it a lot! Even my five year old loved it! Thanks for the quick, easy, low-fat recipe!

Hash Brown Quiche

I think this is a very versatile base recipe. I've made this several times, first time I followed directions exactly, and it was pretty good. I've since made it with different cheeses, cooked spicy sausage, bacon, assorted veggies. Lots of different directions to take this, and I've liked them all. If you're using a big pie pan, I think you'll definitely want to add an extra egg or two. Definitely a keeper!
