Easy Biscuits

These biscuits were so easy and turned out just the way I wanted! I've tried dozens of recipes and always end up with hard, dry biscuits. These turned out light and fluffy and tasted great with country gravy or jam. I didn't have the self-rising flour so I used regular flour and added about 1 tablespoon of baking powder and 1 teaspoon of salt. These rose nicely and because of folding the dough over before cutting, they were easy to separate into halves for buttering after baking. My oven runs a little warm, so I only needed to bake for about 15 minutes. Yummy! Thanks, this recipe is a keeper!

Ultimate Maple Snickerdoodles

This was a wonderful treat! Soft, chewy, so tasty! I was looking for a simple, soft cookie and this is it! I didn't have the maple sugar, so I rolled the cookies in a basic cinnamon/sugar mix and they turned out perfect! I took some to work the next day and everyone loved them! Thank you Linda!

Vinegar Pie IX

This was a tasty pie. The recipe was easy to follow, but it didn't make much pie batter. After I cooked the mix, and poured it into the pie crust, it barely covered the bottom of the crust. So I had to cook up some more quickly to add to the pie pan! Because of the spices, it has a taste and texture similar to pumpkin pie. It was really good with some Cool Whip on top. It's made with ingredients I usually have on hand, so I'm sure I'll make it again, but I'll double the recipe from the start. Thanks!

Baked Spaghetti

This was really delicious. My boyfriend loves traditional spaghetti, and I'm not a huge fan of it, so I gave this a try. We both loved it, and so did my teenage son! I actually cut back a little on the cheese, instead of four cups of mozzarella, I used two cups of mozzarella and about a cup of an Italian cheese blend, because that's what I had on hand. I will definitely be making this one again.

Simple Peanut Squash

This was a simple, tasty recipe for butternut squash. I used a larger squash, so I had to more than double the cooking time, as well as add extra sugar, butter and salt. I baked it until it was soft and easy to mash. Very tasty!

Chicken Thigh Fricassee with Mushrooms and Rosemary

We really enjoyed this one. I had to make just a couple of substitutions. I used a Tuscan Herb seasoning because I didn't have rosemary, and I actually used regular green olives. And I'm pretty sure I at least doubled the mushrooms. The chicken was so tender, and everything really blended well. Even my ten year old son loved it and asked that I make it every week!

Cuban Goulash

This was really good! It was such a unique mix of indredients that I had to try it, and I'm so glad I did. My guy and I both loved it served over egg noodles. It was so easy to make, I didn't change a thing. I'm sure I'll make it again. Thanks!

Oaxacan Tacos

These are so tasty! They taste just like the ones we used to buy from a street vender. They're so easy! I use a lot less jalapeno and lots of cilantro and lime. I made it one night and my hubby liked it so much he asked for it the next night, but the only beef we had in the house was ground, and it worked great with that. Thanks!

Potato Bread III

This is a great bread recipe! My mom loves a particular potato bread she buys at the farmer's market, and I was trying to duplicate it. This was very close! I left the potatoes a little "chunky" instead of mashing completely, and I reduced the salt to one teaspoon, and it tasted fine. I had to cut the baking time quite a bit, the loaves were ready in about 30 minutes. I liked the recipe so much that I made two batches today, one batch for my mom and one batch for my hubby and son to enjoy, which they did! Thanks!

Salsa Chicken

Delicious and really easy! I had huge chicken breasts, and I was afraid they wouldn't cook evenly, so I diced them up into bite sized pieces, sprinkled the pieces with the taco seasoning, and poured the salsa over. I stirred it while it was cooking, so the chicken was well coated and seemed to soak up a lot of flavor. I made seasoned rice to go with it, rolled everything up in tortillas with sour cream, lettuce and tomatoes. Delish!

Buffalo Chicken Wings III

We loved these! I added only about 1/4 teaspoon of cayenne because my son doesn't like things too hot, and I used Frank's Red Hot Sauce. Baked a little longer than called for, and after I'd dipped the wings, I let them bake a bit longer as suggested, then turned on the broiler and let them crisp up a bit, stirring every few minutes. The sauce thickened up nicely and we absolutely loved the flavor. I will definitely be making these again!

French Silk Chocolate Pie I

We love this recipe! I was looking for a chocolate pie that used the ingredients I had on hand and this was it. I've made it several times and it turns out each time. I use cocoa powder and oil to substitute for the melted chocolate. To make sure I beat it for the full amount of time, I set a timer. I've never had a problem with it setting up or with the texture being gritty, it turns out perfectly each time. I've used almond extract when I ran out of vanilla, and I've covered the pie with a layer of Cool Whip, then added grated chocolate for a lovely pie. This is my husband's favorite pie now. Thanks for the great recipe.

Egg Fried Rice

This was such an easy way to make fried rice! I added an extra egg, some peas, and leftover cooked turkey for a really tasty main dish. My husband and four year old son both loved it and my hubby asked me to make it again soon! Thanks!

Wings In Cola

What an interesting way to prepare wings! I had only cherry cola, so I used that in place of regular soda. And I was short on the brown sugar, so I used 1/2 cup of brown sugar and about 1/4 cup of honey instead. I wanted to keep a sweet taste, so I cut the garlic salt and onion powder in half. I mixed everything together and let it all marinate for about three hours, then dumped everything in a cake pan to bake! I didn't have to turn everything over, just kind of stirred it a couple of times while baking. And I wasn't about to have the oven on for four hours, so I baked it uncovered for about an hour and a half. The taste was great! Sweet and sticky and yummy! My four year old loved them, too! Thanks for sharing the recipe!

Brown Sugar Meatloaf

My sister tried this recipe and raved about it, so I had to try it! It was great! I didn't have ginger, so I used pumpkin pie spice in it's place and it tasted really good! The brown sugar really added a nice sweetness to the meat. I'll make it again for sure! Thanks!

Unbelievable Rolls

These are unbelievably easy,they turn out light and delicious. I've been making these at least once a week since I first tried them several weeks ago. I get more than 16 rolls out of the recipe, and as others have suggested, I add the salt to the flour rather than the wet ingredients. A keeper for sure!

Easy Spicy Mexican-American Chicken

This was a hit at my house. I used a combination of hot sauce and taco sauce, I was trying to keep the spice down a bit so the kids would eat it. And they loved it! Luckily I made a triple batch of legs and thighs because four pieces wouldn't have been nearly enough. I've made it several times since, and I don't measure, just dump it all in a bowl and roll the chicken around in it before baking. Delicious!

Chocolate Chip Pumpkin Bread

Like everyone else who makes this, we loved it too. It was easy, and it made three perfect loaves. I was low on white sugar, so I used two cups white, one cup of brown sugar. I subbed half of the oil with applesauce. Turned out great, I'll keep this recipe around for sure.

Hearty Vegetable Lasagna

My niece asked me to make a vegetarian meal while she was visiting, and I tried this. It was so good! The non-vegetarians in my family didn't even miss the meat. I used cottage cheese instead of ricotta, and it turned out perfectly. I didn't use all of the lasagna noodles, though. I probably could have gotten by with about half the box. I would definitely make again.
