I loved these pancakes! I had leftover pumpkin from Thanksgiving pies, and this was the perfect way to use it! I added a little extra milk to thin the batter, because it was quite thick, and I added some chocolate chips for taste. This made a huge batch of batter, much more than the three of us needed. I added some more flour and sugar (about 3/4 c flour, 1/2 c sugar, but it would depend on how much batter you have left over), and more chocolate chips, to thicken the batter to cookie dough consistency. I dropped them on a cookie sheet and baked for about 12 minutes at 350 degrees. The cookies and the pancakes were both great! Thanks for such an easy and versatile recipe!
