Barbecued Beef

I followed the suggestion to trim off bigger chunks of fat, cook for about an hour and drain off, THEN add the sauce. I am one who is paranoid about leaving the crock pot on when away from the house, so I prepped this after dinner one night and cooked overnight. I got up a bit early for work the next morning, shredded the beef and put back in the pot for an hour, then 1/2 hour before I left I turned off the crock pot to cool down. I put the crock pot in the fridge on a towel, then after work I warmed on High for about 30 mins. This came out tangy and delicious and my boyfriend is still raving about it. I brought extras to work to share for lunch with a friend and she LOVED it. I am hoping I can play around with this base recipe a bit and make spicy just for fun some time!

Marinated Flank Steak

This is just heaven! Perfect on it's own and great as leftovers on fajitas/tacos or a steak salad. Recipe is easily tweaked to taste. We marinated for several hours, 8 at least if I recall, and i was delicious!

Grilled Greek-Style Zucchini

This is delicious! I baked, but had a ditzy moment and used a smaller pan so the zucchini did not get crisp since everything was piled up. Still, in my opinion it came out like the perfect veggie saute that i have never been able to perfect! I followed other suggestions and used 1 minced garlic clove plus salt instead of garlic salt. I used kalamata olives and grape tomatoes, seeds and all. As I write this I am enjoying leftovers at work, it held up well! I love recipes like this because they are so easily tweaked to personal taste. Next time I am going to toss some feta on for the last few mins, just enough to warm it, and hopefully that will be tasty too!

Beef Bulgogi

Followed this as written and it was delicious. Will try brown sugar and thinner slices next time. We served with brown rice on lettuce and added Sriacha on a few pieces. Definitely delicious and if you have leftovers would probably be delicious in a stir fry!

Easy Sausage Gravy and Biscuits

Perfect! I used just over a half roll of Jimmy Dean Sausage and cooked the rest in patties. We had lefotvers for dinner the next night! Also adjusted to 2C of 2% milk and 1/2 C heavy cream and added a lot of pepper, but otherwise just like Grandma used to make!

Chocolate Espresso Cookies

I actually found this on anther site a few years ago and this is one of my all time faves. Yes, it has a brownie like consistency, so it was a surprise the 1st time I made it, but a GOOD surprise. Every time I make this I am showered with a mix of compliments (Oh my gawd these are amazing) and complaints (I hate you, a cannot stop eating these!), so I am always happy to make and share!

Tangy Cucumber and Avocado Salad

I made this for a b-day part BBQ yesterday and it was a HUGE hit. I did substitute red onion and used a little bit of kosher salt plus table salt, but otherwise followed the recipe. This is a good, yummy, easy recipe and easily tweaked to mood/taste. I cannot wait for my garden cucumbers to come in as that will surely make this even more delicious!

Scrumptious Salisbury Steak in Mushroom Gravy

I cannot believe I haven't rated this yet since I fell in love with it the first time I made it! We followed the recipe the 1st time, but this last weekend I tweaked by using a package of fresh sliced mushrooms and about 3 slices of sliced yellow onion and 1 small minced clove of garlic added to the gravy. As a kid I just loved Salisbury steak and I have never grown out of it. This is so easy and so yummy, and I think it will be a great way to use leftover hamburger after we have made hamburgers, just reduce the recipe for about 2 servings. I use low fat milk (1% or 2%)and 4% fat ground beef, reducing the guilt but not the flavor. This is at the top of my "comfort foods" list!

Lentils and Rice with Fried Onions (Mujadarrah)

Oh my gawd was this yummy!!!!! Admittedly I do not have a standard to compare this to so I cannot speak to authenticity etc, but we just loved it! We took the suggestions for adding Cinnamon and Cumin and used non-fat yogurt. Be careful not to eat it too fast though, the rice and lentils seem to expand in the belly for a very full feeling :-) This will absolutely be made again and again in our house!

Mom's Zucchini Bread

This was very easy! I did have to bake for over an hour, might have been low altitude/gas oven issue, but just took out when testing stick came out clean. This is probably one of the most raved about baked items I have ever made. Friends, family and co-workers all loved it! Moist, just the right amount of sweet and best yet, gone in minutes :-)

Baked Lemon Chicken with Mushroom Sauce

First of all, read other reviews and be sure to add some seasoning! I went ahead and baked this since it worked out to do that with the side dish I was making. It did not brown, but it gets covered with sauce and my bf and i agreed it was still yummy. Here are my changes: 1. Seasoned chicken with Salt, Pepper and Garlic Pepper 2. Added 1 clove of minced garlic and Salt & Pepper to mushrooms while sauteing. 3. Added Salt and a lot of pepper to sauce right after adding broth. Definitely easily seasoned to taste, but we thoroughly enjoyed and will make again!

Over the Top Nachos

This is basically what I make, so here are some suggestions: 1.) Season the meat with El Pato Sauce (spicy, so do to taste) and salt and pepper; 2.) I prefer green onion to regular onion; 3.) Add black olives; 4.) Place in a baking dish and heat in oven, I think I do 425 til cheese is melted, this keeps chips from getting soggy like they can in a microwave. I like to do 2 layers so the chips are evenly covered in yummy goodness! Also, I actually prefer the pickled jalapenos from a jar/can, but definitely whatever floats your boat. Garnish with guacamole if you have available.

Braised Balsamic Chicken

We actually reduced this for 2 servings but probably did not reduce the sauce enough, so about half way through eating it the sauce got a tad overwhelming. I would actually recommend with potatoes to help absorb some of the sauce. Also, we are not huge Rosemary fans, so we will back off on it next time. With some personal tweaking this is a great and easy add to the recipe box for a flavorful chicken so we will be using this recipe again!

Penne with Spicy Vodka Tomato Cream Sauce

I took the recommendation of another reviewer and used fettucine noodles but wish I would have stuck to the penne. This was really easy and tasty, but just as a warning it did not re-heat well. I always mix the leftover sauce and noodles together for leftover pastas and typically get a decent lunch out of it, but this one not so much. I would also add more sausage next time, just a bit....

Bacon Cheese Frittata

I made this for a nice pre-theater brunch with my "in-laws". Everyone loved it, it was downright delicious! The only problem I had was the bacon made it too salty...which I know can vary depending on the bacon. I also added Green onion. I think this is an excellent recipe with endless options for variation and will absolutely make it again!

Mongolian Beef and Spring Onions

We made this last night, and although I told my boyfriend about the recommendations re the sugar he followed the recipe recommendations. We also added fresh broccoli and hoisin sauce. For me it was way, way, way to sweet and almost ruined it for me, but my boyfriend didn't think so, which seems to follow the differing opinions in all the reviews. He did agree he would be ok with reducing the sugar next time. I think we also will eliminate the broccoli and add grated carrots. We used pre-cut "stir fry beef" from the grocery store and it worked great. We also use Bragg's in lieu of soy which cuts down on the sodium. I do recommend cutting back the sugar at least a bit, but understand some people may like it sweet. All in all, a great recipe once it has been tweaked to personal taste!

This was super easy, fresh and delicious. We made with Mexican Rice from this site and it was perfect. We did not have cilantro so just made without and it was great. Really good, easy grilling recipe!

Angel Hair with Feta and Sun-Dried Tomatoes

I am not a big cilantro fan, so I do this with fresh basil instead and reduced fat regular feta. This is kind of a base recipe that can be tweaked to taste, and I just love it!
