Live with my boyfriend of 7 1/2 years, we both really enjoy cooking and trying new recipes. We have a dog, a cat and 2 feral cats who refuse to be domesticated, so they live on the back porch and eat =) I love to Travel and so far Italy is my fave place on earth(visited Rome, Florence & Venice). Dying to take my bf there and to explore lots of other places around the globe.
My favorite things to cook
Mexican food, veggie heavy foods, healthy meals. Love to bake for others!
My favorite family cooking traditions
Cornbread stuffing for Thanksgiving; my family's famous spicy ground beef tacos....I have yet to meet anyone who has not fallen immediately in love with those dang tacos!
My cooking triumphs
Just trying new things! I don't like overly labor intensive, but other than pretty much not afraid to TRY at least once!
My cooking tragedies
well, there was that one time I forgot to add the butter to the pound cake....

Angel Hair with Feta and Sun-Dried Tomatoes
I am not a big cilantro fan, so I do this with fresh basil instead and reduced fat regular feta. This is kind of a base recipe that can be tweaked to taste, and I just love it!

Mom's Zucchini Bread
This was very easy! I did have to bake for over an hour, might have been low altitude/gas oven issue, but just took out when testing stick came out clean. This is probably one of the most raved about baked items I have ever made. Friends, family and co-workers all loved it! Moist, just the right amount of sweet and best yet, gone in minutes :-)

Marinated Flank Steak
This is just heaven! Perfect on it's own and great as leftovers on fajitas/tacos or a steak salad. Recipe is easily tweaked to taste. We marinated for several hours, 8 at least if I recall, and i was delicious!
