Quick and Easy Hollandaise Sauce in the Microwave

I wanted to make my own Hollandaise rather than consume the variety of additives that are in the Knorr packaged sauce. The only problem is that other recipes are either time consuming or use a blender. I'm both impatient and lazy about pulling out infrequently used appliances so I ruled other recipes out. This recipe required neither and had 5 star reviews. I followed the recipe but since it doesn't specify teaspoon or tablespoon of lemon juice so I guessed 1/4 tbls. I tasted the result and added more lemon juice and cayenne to our taste and a tablespoon of mayo as others recommended. I'm so happy, it's perfect!

Stuffed Zucchini

This is one of my husband's favorite meals. I'm new to cooking so I look for easier recipes to experiment with and this one is really easy. I've made it twice. I made a few very minor adjustments. I used Italian bread crumbs and mild Italian sausage, and added a small chopped onion. 3 medium zucchini were perfect and I did not have to precook. I also chopped the scooped out zucchini into smaller pieces. Since there are only 2 of us we always have leftovers. This dish is also great heated up as a lunch or a second dinner.

Cajun Shrimp Orecchiette

My husband and I tried this recipe for the first time last night. It was fabulous! I changed very little. I didn't have any green onions, and I put a whole can of diced tomatoes in rather than just 1 cup. A sprinkle of parmesan on the top, a good roll and yum!

Tomato and Bread Soup

Frankly, I love this recipe. I’m not exactly a cook let alone a “chef” so anytime I can find something that is easy, but unique and flavorful it’s exciting. I had a left over Italian baguette which I hated throwing out and found this recipe. Mostly, I followed it to the letter except added extra tomato, broth, cheese and basil. I copied someone’s else’s suggestion to use a combo of cheese so I added Romano and Parmesan. This is really good. It’s best if you steep it longer and to let all of the flavors combine thoroughly. For any of you at the novice cook level – go ahead and try it you will be pleased
