Wilted Spinach and Almond Salad

I'm so happy to have found this recipe. I like having fresh spinach in the house and use it in many dishes. even so there are times when I have to throw the last of it out because it's going bad. Now that I have this recipe that problem is solved! I made it for the first time last night and could have happily eaten it as my whole dinner. The flavors are wonderful together. I used half of a 16 ounce box of spinach and cut the dressing recipe in half, and used shallots rather than red onions. It was perfect.

Poulet de Provencal

I made this tonight for dinner. My husband loved it (we both love Balsamic vinegar). Since there are only 2 of us I only made 2 chicken breasts. I did not cut any of the other ingredients and it stilled turned out perfectly. Since we really like mushrooms I think I would increase that if I were making 4 chicken breasts. So easy too!

Lemony Shrimp Scampi Pasta Recipe : Melissa d'Arabian : Food Network

This was really delicious and easy to make. I used more shrimp than the recipe called for but didn't change anything else. I suggest adjusting the lemon per your personal taste. I like lemons so 2 lemons was just right for me.

I made this for the guests for my Oscar party and it was a huge it. I followed the recipe as written in the Allrecipes magazine. My husband and all of my quests loved it as I made it.

Spicy Mediterranean Chicken with Sausage-Stuffed Cherry Peppers

Oops missed the addition of the stock but this really turned out great anyway. Not sure if I'll add the stock in the future. Well this is spicy! But we loved it! Looks beautiful and tastes scrumptious. Could not find Peppadews so used another pickled hot pepper. They were larger and I didn't have as many as the recipe called for but it worked.

Roasted Sweet Potatoes & Onions

I tried this recipe for the first time today - Thanksgiving! Gutsy right? Well it is just wonderful. I was a little unsure about the onions but all of the flavors melded together perfectly. The only change I made was to add sliced dates and I was a bit heavy handed when I added the Amaretto. This is a keeper and a new reason to have sweet potatoes every month of the year. Try it, you will like it.

Shredded Tri-Tip for Tacos in the Slow Cooker

Delicious and easy to make We. drained the excess liquid. We used this in tacos for dinner and then made yummy breakfast burritos with eggs, potatoes and cheese added to the meat. Definitely a keeper. I agree that people shouldn't give it a low rating because they don't understand the spices they are working with.

Roasted Sicilian Potatoes | Gluten-Free Goddess Recipes

This dish is fabulous! My guests always rave about it. Some of the ingredients are a surprise but they all come together to make one spectacular side dish that will please you Vegan/Vegetarian guests as well as your carnivores.

Quick and Easy Hollandaise Sauce in the Microwave

I wanted to make my own Hollandaise rather than consume the variety of additives that are in the Knorr packaged sauce. The only problem is that other recipes are either time consuming or use a blender. I'm both impatient and lazy about pulling out infrequently used appliances so I ruled other recipes out. This recipe required neither and had 5 star reviews. I followed the recipe but since it doesn't specify teaspoon or tablespoon of lemon juice so I guessed 1/4 tbls. I tasted the result and added more lemon juice and cayenne to our taste and a tablespoon of mayo as others recommended. I'm so happy, it's perfect!

Stuffed Zucchini

This is one of my husband's favorite meals. I'm new to cooking so I look for easier recipes to experiment with and this one is really easy. I've made it twice. I made a few very minor adjustments. I used Italian bread crumbs and mild Italian sausage, and added a small chopped onion. 3 medium zucchini were perfect and I did not have to precook. I also chopped the scooped out zucchini into smaller pieces. Since there are only 2 of us we always have leftovers. This dish is also great heated up as a lunch or a second dinner.
