Easy Apple Cinnamon Muffins

These turned out pretty good! I would have given it 5 stars, except I had to make some modifications. As suggested by others, I only used 1 apple. I substituted the egg with 1 TBS ground flax mixed with 3 TBS water and the vegetable oil and butter with coconut oil. I also halved the oil for the crumb topping (1/4 cup coconut oil instead of 1/2 cup of butter). I only filled the muffin cups 2/3 of the way full as suggested by others and it made a dozen, not 6. They came out great! Moist and delicious. Can't wait to take them to work tomorrow!

Alaska Salmon Bake with Pecan Crunch Coating

Great base recipe that you add your own touches to. I bought a whole fillet with skin on (about 1 1/4 lbs) and sliced it into 8 portions. Sprinkled fish with salt, pepper, and smoked paprika. I didn't measure the butter, honey, and mustard mixture - just did it to taste. Put it on the fish and let it "marinate" in the fridge for a couple of hours. Toasted the pecans then chopped them in the food processor. Left out the breadcrumbs and pressed the pecans into the mustard mixture. Cooking time was perfect. Absolutely amazing!

Fajita Marinade I

This is a great marinade for fajitas. I made fajitas for a family get together. There wasn't a single slice of chicken left! I did make a few modifications to the recipe. First, I left out the liquid smoke - I didn't have it and we were putting the chicken on the grill anyway. Second, I eliminated the salt. I was out of soy sauce so I tried balsamic vinegar - worked great. Finally, I used a little habenero hot sauce instead of cayenne pepper.

Braised Balsamic Chicken

Mexican Baked Fish

This was really good! I squeezed fresh lime juice over the fish before covering it with the salsa and cheese then put cilantro on top when it finished cooking. I served it with rice and black beans - YUMMY!!

Baked Parmesan Perch

This was okay. I added crushed red pepper and white pepper for a little more spice. Like others suggested, I cooked it far longer than what the recipe called for. I cooked for about 20 minutes and it had a nice crispy cruch on the bottom. Next time, I will try flipping the fish half way through cook time to (hopefully) get more crunch to the crust.

This was really easy. I am not a baker, but these turned out great! I didn't have instant coffee so I used 3 tablespoons of brewed coffee instead of water and instant coffee.

Creamed Spinach

Cod with Italian Crumb Topping

This was really good. I marinated the fish with Tomato Poblano dressing and Chile Lime Hot Sauce. This eliminated the need for egg whites (or mayo). I made my own bread crumbs by putting some garlic-flavored bagel chips in the food processor. This one definitely goes in the keep pile!

Orange-Glazed Cornish Hens

I give the hen 3 1/2 stars and the rice 4 1/2 stars. The rice was AMAZING. I used Thai Jasmine rice. The combination of the aromatic rice with the orange zest was just the right combination. My fiance said the hen was okay, it needed a little more pep. I would probably make the hen again; I will definitely make the rice again.

Ginger Glazed Mahi Mahi

This was probably one of the best fish recipes I have had in a long time! Although, for those who are not fortunate enough to have a gas range (like me), be careful with the heat. I did burn a piece just a little on one side, but the taste of the fish was so amazing that I hardly noticed.
