Easy Apple Cinnamon Muffins
These turned out pretty good! I would have given it 5 stars, except I had to make some modifications. As suggested by others, I only used 1 apple. I substituted the egg with 1 TBS ground flax mixed with 3 TBS water and the vegetable oil and butter with coconut oil. I also halved the oil for the crumb topping (1/4 cup coconut oil instead of 1/2 cup of butter). I only filled the muffin cups 2/3 of the way full as suggested by others and it made a dozen, not 6. They came out great! Moist and delicious. Can't wait to take them to work tomorrow!

Alaska Salmon Bake with Pecan Crunch Coating
Great base recipe that you add your own touches to. I bought a whole fillet with skin on (about 1 1/4 lbs) and sliced it into 8 portions. Sprinkled fish with salt, pepper, and smoked paprika. I didn't measure the butter, honey, and mustard mixture - just did it to taste. Put it on the fish and let it "marinate" in the fridge for a couple of hours. Toasted the pecans then chopped them in the food processor. Left out the breadcrumbs and pressed the pecans into the mustard mixture. Cooking time was perfect. Absolutely amazing!

Delicious and Easy Mock Risotto
Really good! I used a little white wine with the broth and added parmesean cheese and frozen peas....yummy!
