The Best Meatloaf

Kristen's Awesome Oatmeal Cookies

Made cookies as stated and cooked for 13 minutes out of the 12-15 suggested. Cookies came out tasting good but too dry. Won't make this recipe again as I have others that are fluffier and softer.

Flourless Peanut Butter Cookies

These are rich but do not taste the way usual peanut butter cookies taste. I found that mine even after adding some vanilla extract was quite crumbly. After the cookies finished they tasted a little too rich and they were still too crumbly. This was a good idea but needs some tweaking.

Texas Jambalaya

Balsamic Chicken

This was ok. I marinated the chicken for an hour and it turned out flavorful and tender. Really the only issue I have is that the chicken turned out a little too sweet for my family's taste. I think it would be better without the sugar.

This was a really nice dish to make. I used the recipe as a base and added crushed red peppers, Italian seasonings, salt and pepper. In addition I cut back on the spinach some probably 3/4 of the spinach (could have used even less). I think the dish would have been bland without all the addition spices I added. Overall not bad.

Indian Tandoori Chicken

Made recipe as written but the chicken wasn't anything special. The flavor did set in ( had 4.5 hours to marinate) but it was still subtle. There wasn't enough to thoroughly coat the chicken. Not too bad but not great either. Won't make again.

Roasted Grapes and Carrots

Made this tonight and was not impressed. Followed the recipe to the T but the side dish just tasted like warm grapes and carrots even though I added additional spices to try and overcome this. I just don't see how this is in any way Indian cuisine. Won't make again.

Mustard Chicken

Tastes good but messy as hell to make. Try putting the onions/bread crumbs in a ziplock bag along with the chicken and shaking it will help some.

Egg and Hash Brown Pie

Made this last weekend for a charity event at our local homeless shelter. I substituted the bacon for ham and nearly doubled the amount called for. I also nearly doubled the eggs (per other reviews). I used regular onions verses green onions and lastly used a mexican blend of cheeses. I didn't get to try any but was told it turned out well and tasted good (my husband got a small piece to try when serving was done). I think I'll make it for my guys sometime.

Broccoli Chicken Divan

Made this the other night and my family and I were not impressed. I guess the taste was ok but there needed to be something more as far as the seasoning and an added ingredient for texture. For the most part it was like eating chicken and broccoli mush. I would suggest adding sliced potatoes or even rice to the recipe that may help. Won't be making this one again.

Oven-Fried Pork Chops

Made this recipe last night. I needed a pork chop recipe with a short cooking time and found this one. The pork chops turned out flavorful and juicy. I varied the recipe slightly. I omitted the butter and used butter spray to grease the pan, I added salt, Mrs. Dash and a good amount of Italian seasoning to the Progresso Parmesan flavored bread crumbs I used. Thanks for the recipe it was a healthy alternative to breading and frying.

Black Bean and Salsa Soup

Great soup and easy to make. I made this using Chicken broth instead of Vegetable and put a large dash of Creole seasoning. This turned out really good. Will make again.

Fiesta Pinwheels

Made these yesterday for a party and they weren't too bad. Sadly I had to deviate from the recipe to use what I had but here is what I substituted. 1 can of drained tomatoes with green chiles for the picante sauce, and olives. I put cilantro, garlic, salt, pepper and a few other spices in to make it taste the way I liked it but did not use the taco seasoning. These were tasty but it still seemed like it was lacking. I only had 6 oz of cheese so more cheese and less sour cream would probably have made them better.

Sausage Balls

These weren't bad but they weren't great either. I think the bottom line is they need more cheese a spicier sausage and some seasonings as the recipes made the way it calls is bland. May make again with some tweaks.

Stuffed Portobello Mushrooms

Ran into a few problems with these. First you have to wash the caps but no matter how well I dried them and how long I let them sit they just wouldn't get completely dry. I then filled them accordingly and baked 12 minutes per reviews. The caps were done but the mixture of olive oil, grease from the sausage and water ran all over the place. Lastly to help I had to broil them for a minute or two but alas nothing helped.

Neck Bones and Lima Beans

I am not rating this a 5 star because I made so many modifications I didn't think it would be fair but nonetheless I used this recipe as a baseline and made a similar dish with what I had that was wonderful. I made this using a bag of frozen lima beans, 4 large slices of Country ham as well as a packet of Country ham bouillon, minced garlic, minced onions, lots of pepper a dash of salt and some italian seasonings. I cooked the country ham then broke it into pieces in the skillet on the stove. I then added the bag of frozen lima beans, all of the seasonings and 2 cups of water. I brought this to a boil and then simmered it on low for about 35 minutes and it was wonderful. Hope this helps.

Bottom Round Roast with Onion Gravy

Sorry but I did not care for this recipe. I picked this recipe because the onion gravy looked appealing. The roast turned out extremely bland, the cooking time is not long enough and the gravy turned out nothing like the picture even after adding quite bit more flour to thicken it. I read the reviews before making this so I seared the roast and even added Garlic as well as additional seasonings but it didn't help at all.
