I want to start eating healthier and have been watching what I make and eat. I'm hoping that you can give me some new or creative ways to eat healthy esp snack foods. I am particularly interested in low calorie ideas. When you are eating healthy what do you like to munch on in between meals? MORE
About this Cook
I love to cook and am always trying new recipes. I cook home cooked meals daily, bake regularly and love to entertain. I host large parties and Thanksgiving dinners so I am used to cooking for numerous people.
My favorite things to cook
Any kind of dessert. I love to bake and make desserts for my family and friends. I always cook to taste and don't mind getting dirty when making a good meal. I am humble enough to take constructive criticism and suggestions for a better and/or easier dish. I also dabble in ethnic foods and try to mix things up as often as I can.
My favorite family cooking traditions
Baking cookies at Christmas time for family and friends. Cooking Thanksgiving meals for my family and hosting cookout and parties each year.
My cooking triumphs
Potato salad, Reuben dip, Turkey, Country style steak, Mexican pork casserole, pho, Mexican beef stew, Ceviche, Triple berry shortcake, Coconut cake, coconut macaroons, Pina-Colada cake, Banana nut bread, Banana pudding, Pecan pie bars, Meze dip and more.
My cooking tragedies
Chocolate truffles, Salmon, regular tarts, Hot & sour soup, scones, stuffed mushrooms, German food and Sausage & cabbage soup.

Carnitas Filling
These weren't too bad. I made them for my guys and they liked them a good bit. The only two complaints I had were that the tomatoes did not stew down enough even though they were diced small and that they were a little too spicy (not too much just a hair more than I like). I would make these again.

Creamy Cheesecake
I made this last night and the taste is pretty good. I took the advice of others and mixed the filling for 15 minutes but still it had some lumps. I think next time I make this I'll leave the cheese out until it's not just soft but room temperature. It needed more time so I baked it for 33-35 minutes and then turned the stove off leaving it until the oven cooled. Lastly I cut back on the sugar per another's review and I would have to say 2/3 cup is a good amount.

Chinese Pork Chops
These weren't bad I cooked mine at 425 for 25 min. I marinated the pork overnight. 6-8 hours isn't long enough. They turned out tender and juicy.
