Good For You Macaroni and Cheese

This recipe was delicious and even my very picky husband who hates sweet potatoes and saw me preparing one just for this recipe loved it! You can't taste the sweet potatoes or chickpeas. It's just mac and cheese with the nutrients you get from the chickpeas and sweet potatoes! I must say though, that the prep time took me much longer than 25 minutes because I had to make the mashed sweet potatoes prior to everything else. Also, I ran into a scalding issue with the evap. milk and roux. That wasn't really a problem in the recipe. More a problem with the clean up. The entire recipe from beginning-end took me about 2.5 hours, and I'd consider myself an intermediate cook. This recipe also made a ton of leftovers! We didn't have a 9x13 pan, so I improvised and used 2 9inch pie pans. Worked just as well and my husband liked how I just cut our mac and cheese portions into pizza-shaped triangles. :) Yes, he's a 10 year old trapped in a 30 year old's body. But I love the man. Try this recipe! Also, I recommend adding more salt to the evaporated milk/roux mixture. The mac and cheese wasn't very salty, but the cheese really packs a punch!

Rosemary Roasted Pork Tenderloin

Had this recipe in my "recipe box" for a while. Had all the ingredients except the fresh rosemary at home, so my husband had me email him the recipe and he made this last night which was such a treat to come home to, let me tell you! The only reason we didn't have the rosemary on hand was because I must've forgotten to buy it, but we happened to have fresh chicken herbs in the fridge, and my hubby decided to use those instead, and it really tastes fabulous! I didn't realize we needed to marinade the pork, but when hubby saw that, he was like, "Let's follow this recipe as is and see how it turns out." So we went out for dinner the night before he made this. So glad we let it marinade so long. It really enhanced the inside of the meat. Not the most beautiful looking dish in the world, but by far, one of the tastiest! Highly recommend.

Fresh Spinach and Sun-Dried Tomato Lasagna

My husband made this for dinner last night. It was a really nice surprise to come home to let me tell you! The only thing was that he left out several key ingredients that I think would have made all the difference. He didn't have any type of sauce on the top layer of noodles. All he did was put a light sprinkle of parm cheese and it didn't do anything but dry out the top layer of noodles making them too chewy and crunchy for my liking. Also, he left out the wine and the onions. I think he may have left out the nutmeg too, but not certain. I'm an onion and garlic lover, so i was a little sad that there weren't any onions in here, and I can see where they would really bring this dish to life. The missing wine would really round out the flavors overall. But the kicker is that when i removed the top layer of dried out noodles, I thought he had cooked with wine. He laughed b/c he said the recipe called for it but he left it out. It's still very tasty without these key ingredients. But I'm going to make this recipe myself sometime soon using all the ingredients here and see if it doesn't come out more moist.

Greek Lemon Chicken Soup

I made this and just like KerryW mentioned, it was over-the-top salty. My husband and I tried to eat it, and it was just too much salt. Next time, I'll either use 3-4 cups of water in place of chicken broth to balance out the salt when adding the chicken soup base, or i'll ditch the base all together. Otherwise, the soup came together nicely, looked just like restaurant quality, and smelled delicious. It was just too bad we had to waste so many ingredients because of the saltiness.

Chicken Marsala

Made for dinner after long day at work last night. Husband and I thoroughly enjoyed it, but it was missing something. I did what other reviewers suggested and added some cream and chicken broth. But it was bland. I think it needs more salt and maybe garlic powder. I also chopped up about 5 garlic cloves and added that right at the end of cooking time because we are huge garlic fanatics. That boosted the flavor. But it was still bland. The dish itself smelled amazing though and we did use dry marsala wine as opposed to sweet since this recipe didn't specify. It was quick and easy. Will add more salt next time and maybe even some green beans and potatoes!!! YUM!

Snow Flake Cocoa

I came across this recipe back in June of 2011. I'm from the Midwest, and our summers are super hot, and winters get super cold. Spring and Fall is so unpredictable. Well, I was a good girl and waited and waited and WAITED to make this recipe until now. I will be making it this weekend. I can tell from all the ingredients that it will be good as I love everything that goes in it, and I'm sure they will all go well together. If my hypothesis is incorrect, I will be back to update my review. But I highly doubt it will need updating. CANNOT WAIT!!!

It's Chili by George!!

Made this exact recipe over the weekend for a party we had at our apartment. It made A LOT of chili! That was a good thing though because it was a big hit! I did as another commentor suggested and doubled the spices just to ensure that we would get that delicious "chili" flavor we all know and love. It worked. I also added a can of corn that we had in the pantry for added heartyness. Next time, I will probably get a can of stewed tomatoes and use that in place of half of the tomato juice. The chili was a bit soupy the first time around. After being frozen and reheated on the stove, however, it was not quite as soupy. Heats up great too. Will be making again very very soon.

Sauteed Garlic Asparagus

Made this as a side dish with Tilapia. The flavor was fantastic. Asparagus is one of my favorite if not my favorite vegetable to eat, but I never prepared it before. I would not leave it on for 10 minutes on medium heat next time as it did brown quite a bit and the garlic lost that delicious stinky garlic flavor I love so much. 7-8 minutes will probably suffice next time. Other than that, this recipe was right on!

Easy Baked Tilapia

I found this recipe yesterday at work and I'm in weight watchers and was looking for something light and tasty. I had all the ingredients listed except the lemon, so I just squeezed lemon juice on the fish fillets before baking. The meal was so good and satisfying! I wanted seconds and thirds but I have to control myself. I will be making this again in the very near future. Thanks for the awesome recipe!

Slow Cooker Pulled Pork

My fiance loves to order BBQ pulled pork almost every time we go out to eat ANYWHERE! (Including places like Cheesecake Factory.) It's one of his favorite go-to American foods. One night, he had a taste for them but we're now on a strict budget for our wedding. So I suggested he look online for a recipe. He found this one, so I picked up the ingredients, and he prepared it the next morning. When I got home from work, I drained it and put the bbq sauce in there. I never would've thought to use Root-beer to flavor the meat. This is just as good if not better than the pulled pork they serve in restaurants. This is a go-to recipe on a hectic work week for us now. Thanks!
