Vegan Pancakes
i used 2 tbsp of oil, and used milk (yes i know not vegan) instead of water. they were really great. the batter is really thin at first, but after sitting for a few minutes thickens up.

Canada Day Nanaimo Bar Cheesecake
followed the recipe exactly. it looks just like the photo. it tasted pretty good, but was absolutely nothing like a nanaimo bar, except in looks. so that was quite disappointing. it's more just a chocolate topped cheesecake. i didn't bother checking while baking and just pulled it out at 40 minutes. it was a bit overbaked, so check around 30-35 minutes. also, i had no problem finding custard powder, maybe it's not something normally stocked in american grocery stores? (i'm in canada.)

Buttermilk Pancakes II
the best thing about this recipe is that it uses 3 cups of buttermilk! so if you buy buttermilk for something (as i did) it uses it all up haha. that being said, these pancakes are good but not great. i didn't find them to be super fluffy. they were a bit lumpy when cooked (haven't had this problem with other pancakes). they were a bit too egg-y for me. and i wish they were crisp on the outside but that's just a personal preference. so overall these are good but i will try out another buttermilk pancake recipe next time. oh and they do not make too many, unless you don't like pancakes! then why are you making this recipe anyway. i love pancake leftovers.
