Amazingly Easy Irish Soda Bread

WOW, this was the easiest and tastiest bread recipe I've ever made! Thick, hearty, and delicious. I didn't change anything in the recipe except a few extra oats, and I made 2 loaves instead of 4, and it filled my kitchen with a heavenly aroma and I couldn't help but tear off a hunk of the crispy outer edge and eat it hot from the oven. I made this to complement my St. Patrick's Day stew, and it was a HUGE hit. My father doesn't even like brown bread and he gobbled it up. I served it with an herb butter (just mixed in a bit of dried parsley and basil, salt, and pepper into the butter) and brushed a wee bit over the top right when I served it. Oh MYLANTA, it was amazing. I am actually making more right this afternoon it's in such demand!

Pumpkin Mousse

Oh my, this was absolutely delicious!! I didn't add quite the full 3 tbsp of white sugar, and next time I am going to leave out the mace (I used only a few small pinches, but it still overpowered the mousse with a cloying peppery taste... not a fan) and further reduce the cloves to just a few small shakes. Light and airy, like a deliciously smooth pumpkin pie filling without the guilt!

Chicken Tikka Masala

Excellent dish! For the marinade, I only used about 1/2 cup of yogurt because the excess gets thrown out and I didn't want to waste it, and it worked great! I also omitted the cinnamon but added 1 tsp of garam masala I bought at the Bulk Barn, and left out the salt entirely. As well, I just sauteed the chicken lightly in a pan without skewers and added it to the sauce. Much easier and tasted great, but without the char-flavour that some people might miss. For the sauce, I added one minced onion and used about 3-4 cloves of garlic (I love the stuff). I also added some yellow curry powder, extra tomato sauce and substituted the cream for light yogurt. I simmered it with the yogurt in it for a little too long, and it separated (and looked weird), but it was DELICIOUS! Next time, I added the yogurt until just before serving to heat it through and it was just as fabulous but didn't have the separated dairy look. My husband LOVED it, and my brother (who is an extremely picky eater) actually requested some too! I will definitely make it again.
