About this Cook
Practically born cooking. My mother says that one morning when I was about 5 or 6 she promised me pancakes for breakfast. Well she awoke later that morning to the smell of pancakes cooking. Since she knew she and I were the only ones home, she was a little concerned. She said she came into the kitchen and found me standing in a chair at the stove, pouring pancake batter into a hot, oiled skillet. Next to me on the stove, was a plate of about 3 or 4 pancakes I had already cooked. She didn't realized until then I much I'd paid attention to what she did in the kitchen!
My favorite things to cook
Italian, Indian, Mexican food. And of course Dessert!
My favorite family cooking traditions
New Orleans style Seafood Gumbo, Macaroni and Cheese, Lemon Jello Cake, Rum Cake, Monkey Bread. I've learned to make all but the Monkey Bread!
My cooking triumphs
A friend made me this fabulous Curry Chicken, when I asked him for the recipe he refused. I said fine, I'll figure it out. I did, and when he and other friends tasted it, mine was better!
My cooking tragedies
Lemon chicken. I didn't realize that you can't marinate chicken in straight lemon juice for 6 hours.

Chantal's New York Cheesecake
Delicious!!! Used the water bath, and followed directions exactly. Worked perfectly, no cracks. After the hour baking time, I turned the oven off, and left the cake inside as directed. I remember thinking this doesn't look done. Cake was very, very wet, and had not pulled away from the sides the way others had indicated it would, so I was a little concerned. However, I looked again 2 hours later, and the cake didn't look wet anymore. I left in the oven overnight, by morning it had pulled away from the sides. I let it age in the refridgerator 2 days before serving. The flavor was awesome, perfect. Not to sweet, a good cheesecake. Deserves all the ratings it is receiving. Thanks Chantal!

Pina Colada Cake III
Awesome!!! I changed quite a few things. Used White Cake mix, coconut creme pudding, & Coconut Rum. Put a cup of toasted coconut in the cake batter. Instead of 4 eggs, I used 6 egg whites. Instead of 1/3 cup oil, I used a cup of mayonnaise, and 2 Tablespoons oil. Also added 1/3 cup water. But the finished product.... WOW!!!! I've had 4 requests for the recipe.

Italian Spaghetti Sauce with Meatballs
It was ok. A little too much pepper for my tastes.
