Best Ever Crab Cakes

These were great and easy to make. I substituted breadcrumbs for the crackers and 1 tbls fat free greek yogurt & 2 tbls dijon mustard for the mayo. It tasted wonderful!

Chocolate Sugar Cookies

I think these cookies place a nice spin on chocolate sugar cookies. They're chewy and delicious. After recently coming across cinnamon M&M's, I decided to make these cookies with them. They're yummy. The cinnamon/chocolate flavor is subtle - and I would keep it that way. The only other thing I did differently was to replace the shortening with butter. When I did that, I chilled the cookie dough in the fridge for an hour before shaping and baking.

Cindy's Pumpkin Pie

I just made this yesterday for Thanksgiving and it was spectacular! It's the pumpkin pie recipe I've been waiting for. The vanilla ice cream makes a HUGE difference than using either condensed or evaporated milk. HUGE. Plus, I went a step further and used Hagen Das (yum!) for the extra richness. From now on, this will be my go-to pumpkin pie recipe.

Chocolate Peanut Butter Cookies

The recipe is pretty straightforward. I love the combo of chocolate/peanut butter. They came out exactly as they were supposed to. One change I did make was to add a peanut butter M&M in the center of the cookie (wrapping the dough around it). So when you bite into the cookie, you get an extra treat!

Balsamic Chicken and Fresh Mozzarella

My husband loved this dish! After marinating, I emptied the vinaigrette and used fresh dressing. I cooked it on the stove top for 15 minutes, then in the oven for another 25 minutes (I used thick filets). with 5 minutes left I put fresh mozzarella on the chicken and sauteed the tomato to soften it up. It's a keeper.

Pumpkin Chocolate Chip Muffins

Super yummy and super easy to make. The only thing I did differently was to melt the chocolate chips and add them to the muffin tops as a swirl. Everything else was the same and just delicious.

Extra-Yummy Fluffy Pancakes

These are SO GOOD! I've tried other pancake recipes to mix things up and I always come back to this one because it is consistently delicious. One change I make to it: I add more flour to make the total 1 2/3C flour. It helps thicken up the batter.

Pumpkin Spice Cupcakes

These are the best pumpkin cupcakes I've made. I followed the recipe exactly as followed. I'm not sure why so many altered the recipe. The ONLY thing I changed is the baking time. I set the time at 20 minutes. They're perfect!

Big Soft Ginger Cookies

I will be making these again. It's a straight forward recipe, easy to follow. The cookies are chewy enough and taste wonderful. The only change I made was to use 1/2 cup brown sugar and 1/2 cup granulated sugar instead of 1 cup granulated sugar.

Cinnamon Rolls II

This took a long time to make. But perhaps it's the extra love required that makes them so darn good. I can't believe how delicious they are. My husband also gave his two thumbs up. Yummy and decadent. However, because of the work involved, I'll probably save this recipe for company or a holiday.

Winter Squash Rolls

These are delicious! Unfortunately, I had to make them a second time since they didn't work out the first time. It was my fault; after letting the dough to rise the first time, I then put the dough in the fridge overnight thinking it would be ok to rise again. Then, I didn't thoroughly allow the dough to warm up to room temperature. What ended up coming out of the oven was half a dozen rocks. Determined to figure out what happened, I made them again and this time allowed the dough to rise at room temperature and they came out perfectly!

Zucchini Souffle with Monterey Jack Cheese

I really liked this. The combination of flavors and textures works well. The only changes I made: added 1 sliced shallot, 2 tablespoons parmesan cheese and I substituted 1/3 cup flour with 2 teaspoons baking powder for the 1/4c biscuit mix I didn't have.

Chocolate Chip Cream Cheese Muffins

These came out great. I was a little nervous at first since the dough seemed a bit on the "gummy" side, like it had too much flour, but the end result is almost perfect. The muffins are light, fluffy and have the right amount of chocolate in them. I'll make these again.

They're easy to make and taste great! I used Egg Beaters for the eggs and unsweetened applesauce in place of the oil. I omitted the pecans. They're soft and packed with flavor!

Pumpkin Streusel Muffins

Pretty much anything with pumpkin in it is gonna have me hooked. These were no exception. So good. And easy to make. I did make one change: I added 1/2 an egg and 1 tsp granulated sugar to the cream cheese. Once creamed together, I added a small dollop into the muffins before baking. It's a wonderful mix of flavors and textures. Just a good recipe all around.

Sour Cream Coffee Cake

These are pretty good. I actually made them as muffins instead of a whole cake. I just had a little bit of difficulty with the cinnamon/sugar topping. Most of it came off as I ate it so it was a little messy. Otherwise it tasted great and was easy to make. Oh, and since I didn't have sour cream I used fat free Greek yogurt and that worked like a charm!

Baked Zucchini Chips

These were good and I'll make them again since they're pretty easy. I dipped the zucchini in flour first, then egg (I used Egg Beaters), then breadcrumbs. Then I re-dipped into the egg and coated a 2nd time. So they were completely covered. I did the same for sweet potato chips too. Both types were yummy!
