Chocolate Peanut Butter Cookies

The recipe is pretty straightforward. I love the combo of chocolate/peanut butter. They came out exactly as they were supposed to. One change I did make was to add a peanut butter M&M in the center of the cookie (wrapping the dough around it). So when you bite into the cookie, you get an extra treat!

Big Soft Ginger Cookies

I will be making these again. It's a straight forward recipe, easy to follow. The cookies are chewy enough and taste wonderful. The only change I made was to use 1/2 cup brown sugar and 1/2 cup granulated sugar instead of 1 cup granulated sugar.

Chocolate Sugar Cookies

I think these cookies place a nice spin on chocolate sugar cookies. They're chewy and delicious. After recently coming across cinnamon M&M's, I decided to make these cookies with them. They're yummy. The cinnamon/chocolate flavor is subtle - and I would keep it that way. The only other thing I did differently was to replace the shortening with butter. When I did that, I chilled the cookie dough in the fridge for an hour before shaping and baking.

Unbelievable Rolls

These rolls just didn't work out, I hate to say. When they failed the first time I thought I must have done something wrong so I made them again. After going step-by-step and following the recipe EXACTLY, they still came out awful. It's like the dough never rose; it remained heavy and dense. I don't know what happened. I'm sure they would have tasted good if they didn't turn out like hockey pucks.

Winter Squash Rolls

These are delicious! Unfortunately, I had to make them a second time since they didn't work out the first time. It was my fault; after letting the dough to rise the first time, I then put the dough in the fridge overnight thinking it would be ok to rise again. Then, I didn't thoroughly allow the dough to warm up to room temperature. What ended up coming out of the oven was half a dozen rocks. Determined to figure out what happened, I made them again and this time allowed the dough to rise at room temperature and they came out perfectly!

Cindy's Pumpkin Pie

I just made this yesterday for Thanksgiving and it was spectacular! It's the pumpkin pie recipe I've been waiting for. The vanilla ice cream makes a HUGE difference than using either condensed or evaporated milk. HUGE. Plus, I went a step further and used Hagen Das (yum!) for the extra richness. From now on, this will be my go-to pumpkin pie recipe.

Libby's® Famous Pumpkin Pie

I wish I could say I loved it, but I just didn't. When I saw so many positive reviews I was excited to try it. It came out fine, it looks beautiful and has wonderful consistency. But as another reviewer stated, it's just missing something. Can't put my finger on it. I don't know if it needs more sugar AND more spice or even something to make it seem creamier. It's OK.

Kalamata Olive, Tomato, and Cheese Melt

It's ok. Tasty, but I don't love it. I added sundried tomatoes to add to the flavor and that was nice. It's otherwise easy to cook, didn't take too long.

Cream Cheese Pumpkin Muffins

They're easy to make and taste great! I used Egg Beaters for the eggs and unsweetened applesauce in place of the oil. I omitted the pecans. They're soft and packed with flavor!

Best Ever Crab Cakes

These were great and easy to make. I substituted breadcrumbs for the crackers and 1 tbls fat free greek yogurt & 2 tbls dijon mustard for the mayo. It tasted wonderful!
