Lemon Square Bars

I was looking for a good lemon bar recipe and this is it! I gave it four stars because I didn't follow it exactly, I used Paige's modifications and made a few of my own: I used Splenda in place of the sugar called for in the filling. I didn't have any baking powder, so I skipped that! I didn't melt the butter, just combined it with the flour, powdered sugar and salt with my hands and patted into a parchment lined 9x13 pyrex. The bottom layer took a little longer than 15-18 min @ 315, so I think next time I'll bake it at 350 and just keep a close eye on it. I used three large lemons and the zest from them in the filling. The key to cutting them nicely is to let them cool completely! I did slice off the edges to give a nicer, more uniform appearance (and myself lots to sample without eating half the bars--- which would have been easy to do!) This is a great, easy recipe to start with, highly recommended!

Simply the Easiest Beef Brisket

Five stars for flavor! What a great taste! I gave the recipe four stars though, only because of a few slight moderations that I made: I halved the beer and chili sauce and used only 1/4 cup brown sugar. (and still had a LOT of extra sauce) Salted and peppered beef and seared it before putting into oven. Baked for an hour and a half...perfect!

Ramen Coleslaw

Wow! Just what I was looking for! Very easy to throw together and very, very tasty! I made a few modifications based upon what I had on hand: Used a "cup o' noodles" type ramen soup, the spices are already mixed in, so I jusst crushed everything together, added a small head of cabbage, about an eighth head of red cabbage, two grated carrots and 1/2 small chopped onion. I doubled the dressing recipe accordingly, and used 1 Tbsp sesame oil with the oil called for (1T sesame+3 T canola oil.) Used rice vinegar and Splenda in place of the sugar. Added a splash of soy sauce. I didn't have almonds or peanuts, so I chopped up some cashews instead. I've already eaten two bowls and can't wait to make this again...so that maybe my family can try it! Thanks for a great recipe!

Awesome and Easy Creamy Corn Casserole

Oh my! This was such a hit at our Thanksgiving dinner! I stumbled across the recipe while looking for something else. Had all the ingredients on hand and figured I'd give it a shot. Every single person there raved about it and asked for the recipe. This will become a staple in this family...I can't wait to make it again! I made it exactly as written, though I will try it next time with half the butter to compare. Thanks for a great recipe!

Chicken Hurry

Easy and excellent! My daughter requested the same dish two days later! I did not have brown sugar, so I used Splenda instead. It was so good, there were no leftovers!
