Bacon for the Family or a Crowd

I didn't have to try to this recipe to give it 5 stars because I prepare my bacon like this ALL the time! It comes out so pretty! Never thought to share. Glad you did :)

Restaurant-Style Buffalo Chicken Wings

This recipe will have your wings tasting just like the restaurant. I season my wings with creole season, onion powder, & garlic powder ( I am from New Orleans & we like our season). I fried the wings and made the buffalo sauce as the recipe stated & O my they are good! My family loves this recipe!

Taco Dip I

I love this recipe! The only thing I do different is that I chop a half of an onion instead of green pepper. I also cook a 1/2 pound of ground meat an add once it cools off ( I have even added a 1/2 can of refried beans to this dip along with the 1/2 cooked ground meat) and it is even BETTER!! I ALWAYS get request to make this dip and there is never any left : )

N'Awlins Stuffed Bell Peppers

I was born & live in New Orleans and was looking for a good recipe. I gave the recipe a good rating because it was a great GUIDE for me to make great stuffed peppers. However, I had to add my New Orleans touch. I added crabmeat (claw) to the recipe and MORE season than requested (creole season, onion powder, garlic powder, I did not use salt & pepper). Taste your stuffing mixture to see if you have enough season to your liking. DO NOT drain the fat from the ground meat ( It will cause your stuffing to be dry ..if you do, add some chicken broth to the mixture to give moisture or if you blanch the peppers use the water from that. Here in New Orleans, we do blanch (boil) our peppers first before stuffing them. I also add a tiny bit of water in my baking dish then place the peppers in to bake. Next time, I will add Jimmy Dean's breakfast sauge to the recipe. That is a SECRET ingredient we add to our peppersin N.O. I followed this recipe and it was great guide.. ***If you add Jimmy Dean breakfast sauge you may not want to use as much groundmeat because it will make a lot more stuffing unless that is what you want :)

Oven-Fried Catfish

This was good. I am from New Orleans and my family always give a fish fry and serve potato salad. However, next time I will use some creole season to season the fish. I think it will give that nice kick that I am used to. I would also probably use 1/2 teaspoon of thyme next time. My fish came out very pretty. I am to lazy to post a picture, but do try.

Rock's T-Bone Steaks

I enjoyed this rub! I used the 4 tsp of salt and did not find it to be to salty. I did not have t-bone steaks, so I used the steaks I had in the freezer and it was good. I put the steaks in the oven on broil because I did not feel like firing up the grill and it was good this way also.

Caramelized Baked Chicken

This was very GOOD! I used a whole chicken and baked it in an oven bag first at 350 degrees. I then split the bag open and poured the sauce and based it until it was caramelized. Tender and juicy!

Sweet Potato Pie I

This pie is AWESOME! I make smaller pies every year for the March of Dimes bake sale at my job and it sells the quickest! Throughout the year people ask when is the next bake sale because they look forward to this pie. **I use evaporated milk instead of regular milk***
