Pickled Beets

We loved these! A little on the sweet side for my liking so next time will add less sugar. Skipped the cloves all together and added a 1/2 tsp. of whole peppercorn to the bottom of each jar. 10lbs of beets filled 7 - 1 quart jars packed loosely, but I did have to make extra brine for the last 3 jars. These will be a welcoming treat come the holidays. Thanks for sharing this recipe!

Guacamole

Super recipe! And super ez! Cut back on the salt a bit, traded the ground cayenne pepper for a few drops of Lousianna Hot Sauce, no fresh lime - so 1 TBS of lime juice, scrapped the cilantro (hate it) for parsley and dropped the garlic. Family loved it.

Butter Tarts I

My family super enjoyed these. I made them in an extra-small muffin tin. Two bites of heavenly goodness. Added 2 raisins to the tarts prior to pouring the gooey goodness. Also,skipped the walnuts and added one whole pecan on the top after filling the tarts. Only because my husband prefers pecans over walnuts. Finally cooked in a preheated 200F oven for 15 minutes, then without removing the butter tarts, turn the oven up to 350F, for an additional 15 minutes. Soooooo yummy.

Barley and Wild Rice Stuffing

Grilled Ginger-Peanut Pork Tenderloin

My husband sliced the pork into long 1/4" narrow slices while the pork was partially frozen. We marinated a few hours, skewered and quickly grilled. Too yummy for words. Thanks for the marinade recipe!
