Corned Beef and Cabbage I

Shrimp Scampi

Yum! So easy to make. I used bagged frozen peeled shrimp, replaced the white wine with chicken broth, and replaced half of the butter with olive oil. I guess next time I will try it with the wine, even though its good the way I made it.

Chicken Tikka Masala

Since I've never had this dish before I didnt have anything to compare it to, hut I think its alright (not great). I doubled the recipe. I salted it to taste and omitted the jalepeno. It still came out pretty spicy. It may not be traditional but I think I will add some diced potatoes next time.

Arroz con Pollo (Chicken and Rice)

The fisrt time I made this it was salty and the rice was mushy. The Adobo, chicken buillon, sazon seasoning packet, pimentos, and alcaparrados ALL contain salt. When I seasoned the chicken I treated the adobo like it was salt (sprinkle VERY lightly). Also I used a small red bell pepperbin place of the pimentos, and rinsed off some capers in place of the alcapparado. You can put the frozen peas in the rice before you pour the water in. I also increased the rice to 2 cups and used about 3&3/4) cups of water. It was so easy and came out great.

Creamed Spinach III

As written, this recipe would have been very bland, but (as the other reviewers stated) it is a good base recipe. I took other reviewers' advice and used frozen spinach, added a little flour and extra cream to thicken the sauce, added half a chopped onion, and 2 cloves of garlic. I also halved the nutmeg, and added garlic and onion powders. The nutmeg was still pretty strong, but it was good. Even though it came out alright, I think it was missing depth or richness. Maybe next time I'll use salted butter, and add some cream cheese or some shredded 6 cheese italian blend.
