Black Bottom Cupcakes I
I really love these. So moist, rich, and super easy. Here's a great tip; I used a large cookie scoop to transfer the batter to the cupcake liners and it came out to exactly 24, evenly filled cupcakes. Then I used a small cookie scoop to top the batter with the cream cheese mixture right in the center. They came out perfectly and the cream cheese mixture sunk into the batter as intended. Happy baking!

Cream Cheese Penguins
So adorable! A little tip for the filling...we used spreadable cheese in garlic and herb flavor (Laughing Cow). We used a plastic sandwich bag with a small hole cut in the corner to pipe in the filling through the top hole. As the the olive fills the split side separates to expose the white belly, so over-filling will make it seep through the sliced side just enough. Very easy, very fast. Loved the red scarves but couldn't find long pimentos so ours were scarf-less.

The Best Banana Bread
WOW! I've always failed at banana bread. And to think how this very simple to make recipe with a few basic ingredients has made me banana bread royalty in my family! No changes are needed at all. It is absolutely perfect as is. Just between us, I do sprinkle in a few chocolate chips once in awhile and my kids call it my special banana chip cake. They ask for it often. Thank you for the great recipe Libby!
