Mediterranean Lamb Burgers

Reviewed: Jun. 22, 2013
They were so good. I'm making them again. I might try roasting the garlic that goes in the sauce first. They came out great. Also thought sliced cucumbers and grilled onions were good options on top.

The Best Parmesan Chicken Bake

Reviewed: Jun. 10, 2013
It's really yummy and really easy. I honestly don't understand any negative reviews. I will say this. The chicken did take a bit longer to cook. At a certain point I decided to throw a bit of tin foil over the top to prevent excessive browning. I recommend checking the internal temp for doneness. If you use a good sauce you wont be disappointed.

Honey Wheat Bread II

Reviewed: Jan. 7, 2013
Easy. Came out great. Although next time I will be adding more honey and maybe a bit more salt. It's got a great texture, heavy duty enough for sandwich bread without being a chore to chew.

Coconut Cream Cake I

Reviewed: Jul. 4, 2011
Very easy and good. I did a butter cream frosting and it came out good. Although might have been a little too sweet. but I was worried about the whipping cream melting during the course of our BBQ. My other complaint is the picture shows a double layered cake and with soaking the cake in the coconut cream and condensed milk... I did do two nine inch rounds I only soaked for a couple of hours then removed them and placed them in the fridge over night. They didn't get too soggy this way.

Buttercream Frosting

Good basic butter cream. Very thick, can be thinned by adding more milk. I personally added coconut extract it came out well.

Baked Lemon Chicken with Mushroom Sauce

Reviewed: Jun. 26, 2011
Yummy. I did as others suggested and browned my chicken first. I also seasoned it before coating with lemon juice. I put a little more juice on than called for and topped with the whole sliced lemon. I also baked covered in foil. It came out very moist and wonderful flavor after 40 mins. I will be making this again. It was so fast and easy and with baby #2 on the way that's exactly what I need in my life ;)

Roasted and Curried Butternut Squash Soup

Reviewed: Jan. 5, 2011
Ok. Not AMAZING, but pretty good. I think that I'd just use cream instead of the yogurt next time. Also to anyone else making this recipe, allow yourself more time than it states to really cook the squash. I didn't even have a very thick or big one and it took much longer than an hour.
