Banana Banana Bread

I've made this recipe twice now. It's excellent. I do add walnuts, and the second time I added some vanilla and increased brown sugar to 1 cup. I'll add a touch of cinnamon next. My second loaf wasn't done all the way through, though. I use a dark glass baking pan, so I turned the heat down a bit. I need to find the right combination of temp and time with this pan.. or get a different pan. Regardless, both times it got rave reviews. If you make this and it's dry, you're doing something wrong. There is just no way this can be made as directed and end up dry. It's not possible.

Maple Fruit Dip

My husband liked this, my son (14) hated it. I used plain yogurt and added 1/4 t. vanilla, as well as substituting 1/2 teaspoon (a bit more as it overflowed the spoon.. I know better than to measure over the dish. Ah well.) maple flavoring instead of the syrup as my husband is diabetic. I think it needs a bit more sweetener with this method though.. though my husband liked it as is. We used it with Fuji apples. It says serves 8... I wonder, 8 what? It served three of us with one apple each. Maybe 8 if you use it as a fruit salad dressing. Otherwise, it serves 3 or 4.

Rudechack's Franks and Noodles

I'm wavering between 2 and 3 stars with this. I'm giving it 3 because that's what my husband says. My son (14) refused to eat the noodles because part of one of them was 'crunchy'. There's not enough sauce with this.. or at least not when it's just poured over the top. Next time I'll dice the hotdogs and mix the noodles, hot dogs and sauce. I also added more onion (chopped 1 onion) than called for. I might add a can of chopped tomatoes next time and perhaps a bit of hot sauce. Also, the sauce was just "ok" in my book. The main draw for this dish is that it's quick and easy.

Hedgehogs

I'm giving this three stars because it's a great -base- but it's missing important ingredients. I also know these as porcupines, but the main and most important (to my crew) ingredient is missing.. Chopped (or minced) onion. I add 1/2 to 1 onion, which is more than my original recipe called for but it adds great flavor. Be sure to -brown- these, don't just toss raw meatballs into the sauce (ick). This makes a yummy 'byproduct' of the browned bits in the pan.. the rice is not cooked soft (haven't added any sauce and finished cooking it yet..) but by the time the porcupine balls are browned, there are crispy bits of browned onion/rice/hamburger bits. The cook and whoever is wandering by generally gets a taste. Add garlic and Worcestershire to the sauce mix as well as salt and pepper.
