Eggnog II

This recipe was absolutely wonderful. You must know that it is a thick yet light nog, so drinking it is a bit different than a nog you'd buy in the store. I agree that you could choose not to whip the cream at all and it probably would turn out closer to a store nog. I added cinnamon and nutmeg directly into the cooked nog before adding the whipped cream. About 1 tsp. each. It gives it a nice flavor without being too powerful. If you do cook the nog too long, like the previous review, get a strainer to take out any unwanted textures that form in the nog. When you fold in the whipped cream it'll hide a slight over-cooking. Again, it's a thick nog but not dense. Consider not using the egg whites when making this recipe.

Soft Christmas Cookies

Excellent. 350 degrees, 3 cups of flour only, butter instead of margarine for about 8-9 minutes, and for a delightful fragrance and flavor add 1 tsp. cinnamon and 1 tsp. of cardamom. It gives it that Scandanavian/Northern German fragrance that is so welcoming at Christmastime.

Pretzel Salad II

Turned out very well. My changes: After you mix together the cream cheese and powdered sugar, substitute for the whipped topping: small container of heavy whipping cream (8oz) and an additional 2-3 Tbsp. of powdered sugar. Whip cream and sugar together until stiff peaks are formed. Blend this into the cream cheese mixture until smooth. Note: I used homemade whipped cream for a topping. I tried adding a pretzel topping but it was too much...better to use chopped nuts to touch it up if you desire.

Marinated Pretzels

Very good. At first the dill seemed a bit much, but my wife and I began to crave them. I would say adjust the amount of dill weed according to your preference, but the balance of dill and salty pretzel is both novel and refreshing.

Orange Cake

I'm only giving it 4 stars because the recipe as written is not truly an orange cake. Alterations: Use an orange cake mix. (Duncan's Orange Supreme), vanilla pudding, and orange extract. I added a soft white frosting while warm creating a glaze effect. (A clear glaze would normally work, but the orange "glaze" included in the recipe I felt wasn't enough.) When I served the cake, I took the remaining orange glaze and drizzled it lightly on each slice when served. Perfect orange cake recipe!

Perfect Apple Pie

Excellent. I made alterations based on the reviews, and the pie was incredible. The flavors married perfectly. I also added a tsp of vanilla to the filling. Alterations are thusly: Added 1-2tsp. cinnamon and 2 Tbl. of brown sugar to the crust. Used butter instead of Crisco, and 8-10 Tbl. milk instead of water. The filling used 3 types of apples (granny smith, golden delicious, gala). The sugar consisted of equal parts of white and brown. The filling also included a small amount of maple syrup (1/3 cup approx.) and a 1 tsp of vanilla to help "marry" the flavors together (note the nice caramel syrup on the plate (look at photo with a slice of pie and ice cream). Got rave reviews.

Virginia Apple Pudding

Wonderful! Used a bread pan and it baked evenly throughout! Used 1-2 tsp. Cinnamon, 1/2 tsp allspice, and a 1/4 tsp. of nutmeg. Mix the apple mixture evenly throughout the batter...don't just plop it in the center. 2 cups of apples as written is good for a la mode. However, if you prefer to use caramel sauce and/or whipping cream as a topping, you may want to consider 3-4 cups of apples. After the apples are cooked in the microwave, you end up with only 1-1/4 cup.

Mac and Cheese Henwood Style

I'm giving this recipe 5-stars because the sauce is incredible. I do agree with a previous reviewer that you do need more noodles 1 cup/8oz is not enough. Other than that, the flour/milk/butter combination is perfect. You can build off of this by adding more than just onions...you could do garlic, red pepper flakes, or whatever suits your tastes. I added ham/bacon just for some meat. You can also vary your cheeses based on your preferences as well. Way to go...again, the secret is in the flour/butter/milk ratio...the rest you can alter to your liking.
