Red Lentil and Yellow Split Pea Soup Made with a Pressure Cooker
Very good soup. I added ham and the broth which I pressure cooked first and pulled the meat off. I also added celery, a potato, and garlic in a jar already cleaned and chopped from Costco (3T). Since I didn't have enough ham broth, I supplemented it with low sodium chicken broth. I added the carrots (shredded) later as a last step for 15 min.

Sauteed Garlic Asparagus
This is the way we always eat asparagus. One exception. I use olive oil or 1/2 olive oil and 1/2 sesame oil. It's great!

Easy Mashed Potato and Roasted Vegetable Enchiladas
The taste was good. BUT, I would have liked better quantity calculations. For example: 2 Cups broccoli florets vs 1 head broccoli, cut into florets. I don't have packages of instant potato flakes so I had to guess again about how much to use from the box. Numbers and quantities are more user friendly for me since I don't go to the store to buy the ingredients for the recipe.
