Baked Apricot Chicken
20 minutes before I was going to put this in the oven, I was told we had some extra teenage guests so I threw in some additional flash frozen chicken breast that I keep in the freezer for emergencies such as this. I used a whole jar of apricot/pineapple preserves and a bottle of creamy French dressing to stretch the recipe. This was a HUGE hit. Their wasn't a drop left. I served with jasmine rice and everyone liked the sauce on the rice. All agreed that the thigh meat was preferable but there was zero left overs.
