Shepherd's Pie VI

This was really good! My husband and I thought it was much tastier than most restaurants serve. I also used 1/4c. worchestershire along with some garlic powder in the gr. beef, and used bag of frozen peas and carrots. Might cut back on the onion next time or just use a small one. Great on a cold winter night!

Cocoa Oatmeal Cookies

I made these GLUTEN FREE by substituting rice flour for ap. flour and used McCann's quick oats. Also used 1c. GF. choc. chips. don't make too big and bake for 12 min. If too big, they become lacy. Nice cookie! No one will know the difference.

Garbanzo Bean Chocolate Cake (Gluten Free!)

Uh, this is RIDICULOUS... Ridiculously fantastic! For a point of reference, I have been buying the Trader Joe's flourless chocolate cake... this recipe is just as good if not better! I substituted 1/3C egg whites for two of the four eggs. I also used 1/2 C milk chocolate chips and 1 C. semi sweet chips, and dusted the pan with unsweetened coco pwdr. I have a gluten intolerance and only use Ghiradelli as Hershey's is difficult to get an answer about allergies. Hope this is helpful.

Hot Pizza Dip

This recipe is so great for parties, and quick get togethers! I might add a little sour cream or plain yogurt to the cream cheese mix (about 1/4 c. or less. maybe even a T. of milk) to make it a little creamier plus 1/4 - 1/2 t of garlic powder. The cheese seems to be a little stiff for chips, especially if it has been sitting for a half hour. Other than that... will be my go to recipe for quick appetizers and football munchies!!!

Hearty Tuna Casserole

Yep, another winner!! I make this gluten free by using GF pasta, and sharp or extra sharp cheddar. I always add a 1/4c of dry, white wine to the mix. That gives it a little extra something, and probably because that is what my mom always did. Thanks mom! You are so smart!

Asian Orange Chicken

This was SO GOOD! I have had to change to a gluten free diet so I made this with GF soy sauce and used rice flour plus a teaspoon of baking powder. I used 3 breasts and only marinated for 30 min in about 1/2c of marinade. I also only used 2T. of corn starch which I thought was a better consistency. This tasted just like my favorite Chinese hot spot I've had to give up. Total comfort food!!!

Tortilla Soup III

This one will get rave reviews from all ages. It's a hardy soup that my family found addicting! I used flour tortillas in place of chips. Very good!
