All Protein Meatloaf

I used 2 pounds of ground beef and otherwise followed the recipe pretty much. It was a bit sloppy but the last 5 min, I put some slices of cheese on top and that helped keep it together. Pretty darn good.

Almond and Parmesan Crusted Tilapia

Pretty dang tasty. I toasted the almonds just to give them a stronger flavor and then processed everything in the food processor. That made the preparations pretty simple. 5 min under a "normal" temp broil, flipped and topped them for 5 more min. Came out great.

Super Simple Oven Barbequed Chicken

I left the skin of, which created a juicy meat, but since neither my husband or I actually eat the skin, all the seasonings failed to flavor the meat. I'll try it again but this time, pull the skin off and flavor directly onto the meat.

Blackened Chicken

Pounded the breasts a bit flatter, added 1/3 tsp chipotle chili powder and 1/4 tsp garlic powder as well as reducing the cayenne to 1/8 tsp. Delicious and still with plenty of kick! I would cut these into strips and serve them like fajitas next time. Some cool avocado to balance the heat will be awesome.

Bourbon-Mango Pulled Pork

I used one 18oz bottle of BBQ sauce (cheap generic brand) and made a rub of the salt, pepper and chili powder as some one else suggested. Otherwise I followed the directions, so yummy!!

Chef John's Classic Beef Stroganoff

So my husband and I hate mushrooms. I'd like this to be a story of how we learned to love them, but instead I cooked according to directions and after the meat was done cooking, I changed the plan. I poured everything into a colander and drained off all that wonderful liquid (that had the mushrooms in it), pulled out the hunks of meat and put the meat and liquid back into my dutch oven. Then I proceeded with the sour cream and served it over buttered noodles for me and mashed potatoes for the hubby. It was delicious! So even if you don't like mushrooms, do not be afraid of this recipe!

So interesting! (I was out of Hoisin sauce so I added a little soy sauce and peanut butter (I looked it up, it's a good sub!) and added a smidge more of the garlic, ginger and sesame oil).

Simple Roasted Butternut Squash

My squash never darkened up (I suspect that my dishware was at fault, the sides were too high to circulate the heat correctly) but it did soften up and taste good. To finish it off, I sprinkled Parmesan cheese for the last few minutes to make up for the lack of browning.

Thai-Style Tilapia

This needed a little sweetener to add some missing flavor. I sprinkled a little white sugar on top after serving it, but I would add some brown sugar next time while it's cooking. Also, I doubled the sauce and it was delicious.

Herb Rubbed Sirloin Tip Roast

Excellent. I used about a 1.5 tsp of minced jarred garlic (because that's what I had on hand) and reduced the salt to 1 tsp. I had the time so I slathered it on early in the day and baked it hours later. I didn't notice a huge difference in how far the flavor penetrated the meat, but it made me *feel* better ;)

Grandma's Lemon Meringue Pie

For my pie pan, I need to make it for 12 servings (and not the default 8). I followed a few suggestions, changing out the water for milk and using 1/2 cup lemon juice (as I had no lemons on me but I also made for 16 servings, so I'll reduce the lemon juice to 8 Tbps of juice next time.)

Artichoke and Spinach Stuffed Shells

My artichoke dip that I used was not a good match for this. It had too much crunch and was sweet so be careful what you pick! I tried it again with my own recipe and it was better.
