Best Chocolate Chip Cookies

I just made these and they turned out great!! I used dark chocolate chips and baked 1 TB dropfulls for 14 min.

Zucchini Risotto

Used large chicken broth and a chicken broth that was already flavored with spices and white wine. Used 2 Zucchini and double the Basil and tomatoes. Used 8TBS Parm Cheese. Added Rot. Chicken -that I allowed to simmer in the pot full of simmering broth. I also added a steam basket for a few min and let the Zucchini steam in the broth at the beginning so that they woule be partially cooked. My husband who doesn't even like rice loved this. My kids ate it ( after they picked out the tomatoes :-)

Ratatouille

Made this recipe a star with the below changes. Used: Sweet Turkey Italian Sausage, 1- Zucchini, 1 - yellow squash, 1- egg plant, 1- red onion, 1- green pepper, 1 - pack Baby bella mushrooms, 2- cans of diced tomatoes with Oregano/Basil, Freshly Shredded Parmesan Cheese, minced Garlind, Dried Oregano, Dried Basil, black pepper and Sea Salt. First I sliced all of the veges very thin.Then I cut the casings off of the sausage and browned about 5 links. I then transferred this to a simmer pot. I then added more olive oil and sauteed the onions, peppers and mushrooms. I added these as well as the cans of tomatoes to the simmering can. At this point I added 3 tsp of minced garlic, covered the top of the pot with dried Basil and Oregano, salt and pepper to taste. I then sauteed the Zucchini and Squash and added them to the simmering pot. At this point I have been simmering the pot and transfer everything to a baking dish. I then take my freshly shredded Parm and add it on top. I put this under the broiler until melted. It really tasted like a Lasagna!! Even the kids ate it up ( except for the tomatoes :-)

Banana Cake VI

These were fantastic!! I used 2 Cups of bananas added mini chocolate chips at the end and made cupcakes ( 35 :-) They cooked for 35 min and I put them in the freezer for 30 min -- they were awesome and very moist. I had read before about the freezer trick to create a moist cake. Oh, I also added crushed Pecans to the fosting.

Triple Berry Crisp

My go to recipe. I originally made this for my mother's birthday. I always use Blackberries ( tartness) and Blueberries ( for the sweetness) I have made this 6-7 times by now. I couldn't wait for the Blueberry prices to come down so I could make them this summer. I am making this today for the 4th of July BBQ. Awesome with Vanilla Ice Cream.

Awesome and Easy Creamy Corn Casserole

I have been using this recipe ftom this site for the last few years and everyone loves it. I make one whole casserole for my son at Thanksgiving and Christmas. I usually have to make some changes even to 5 star recipes, but this one is perfect just the way it is.

Fresh Asparagus and Chicken Casserole

We love this recipe in our house. I add extra spices and we eat with fresh baked bread sticks. We use Greek yougurt , double to triple the cheese, add basil and Emerils Cajun spice. We make it more like a spicy cajun alfredo.
