Banana Crumb Muffins

AWESOME!!!!!! My son cried when I told him I was going to make muffins instead of banana bread, but he got over that quick enough once he tasted these. I ended up using 1/3 cup of oil instead of butter, but didn't change anything else in the basic recipe. I wanted "finger food", so I made mini muffins and this made 48 of them. Of course the 1st dozen was gone about 5 minutes out of the oven! This one is a keeper!!!

Super-Delicious Zuppa Toscana

I just made this soup for the 3rd time.....It is SOOOOOO GOOD! And definitely very filling!!!!! I used a couple more slices of bacon (because I like it : ) ) and used the milk/cornstarch mixture because I just can't see spending the extra $$ on heavy cream but everything else stayed the same. You've GOT to try it!

Stuffed Zucchini with Chicken Sausage

Made these tonight because I had some REALLY BIG zucchini....They were awesome!!!! I didn't follow the recipe exactly, but then I hardly ever do....It's ok though...make it your own! LOVED THEM! Posted a picture too!

Easy Meatloaf

Ok.....so I made this tonight.....I used dried onions (because I'm not a fan of fresh CRUNCHY ones, and added some worcestershire sauce. I made 3 mini-loaves vs. 1 large one and still had to cook for 1 hour. They are SOOOOO GOOD!!!!!!!!!!!! My "meatloaf mix was 1/3 of each of the following.....Ground Beef, Pork and Veal. I will DEFINITELY make this again and again! even my icky 11 year old will eat this!!!!

Six Can Chicken Tortilla Soup

Made this tonight....and it was SOOOOOO worth it! YUMMY!!!! I made a whole chicken last night so wanted to do something different with the "leftover" chicken. I, like others, used 1 can of cream of chicken soup and 2 cans of chicken broth. The tomatoes I had didn't have chile peppers, so I chopped up some jalapeno's I had in the freezer. I also added black olives, garlic, chili powder, cumin and also a dash of cayenne pepper! This goes in the KEEPER pile! My 13 year old is already asking if he can have this for lunch tomorrow. That thermos I got him for school sure is paying for itself!!!

Meatball Soup

Made this soup last night...and I used pre-packaged meatballs. The soup was AWESOME....the meatballs were gross, but that's not the fault of the poster. I disposed of the meatballs, browned up a lb of ground beef and threw that in. SOOOOO MUCH BETTER! I'll make it that way from now on if I don't make my own meatballs!

High Temperature Eye-of-Round Roast

Ok......I read just about EVERY SINGLE review....yea, I was bored at work....I tried this with a Top Round roast.....I preheated at 500, put it in the oven and left it at 500 for 29 minutes (my oven was pretty clean but it still gets smoky in the house)....my roast was about 3.3 lbs. I have a gas stove, so I took that in account and left it at 200 for 90 minutes and I must say.....I am VERYYYYYYY full right now! My roast was awesome!!!! I posted a picture if you care to look. I don't like blood red rare, so mine is more of a med to med-rare, but it was very tasty! I'm going to try it next time with a more expensive cut. My 13 year old is very happy! He might not eat again for a whole 2 hours now!

To Die For Blueberry Muffins

MMMMMMmmmmmmm!!!!!!! My 13 year old son picked blueberries with his dad yesterday and wanted me to bake something.....I found the recipe...and made HIM bake these ( I just supervised)! He did a fabulous job!!!!!! Even he wanted to use brown sugar for the topping.....I guess I've taught him well, and he didn't even read the reviews! They're almost 1/2 gone already. I guess another batch is in our near future!

All American Roast Beef

Ok.....really.....Just made this tonight and it was AMAZING!!!!!!!!!! You really just need to try it! Don't do anything extra...just make as stated. Used an internal thermostat for the roast....pulled it out of the oven when the temp got to 120....for my roast that was 3.12 lbs, it was about 1 hour 15 minutes. Let it sit and the temp rose to 135. Was PERFECT! A little red, but just perfect for us! I feel so accomplished right now.....Making a Roast Beef was always my biggest fear....Now I know I can make this for company w/o a panic attack! :)

Pork Chops and Sauerkraut

I have this thing where I HAVE to try a new recipe every weekend, because I get bored with food. THIS was it for us this weekend. I used pork sirloin chops that were REALLY thick and I spiced them up & browned them like others....sauteed some onions and mixed that with drained sauerkraut. Threw a chopped up apple on top and a dash or so of apple juice. Made Mashed potatoes on the side and YUMMMM!!!!! My 13 year old who loves everything insisted he was going to hate this.....but he loved it! The pork just fell apart so I helped it a bit and mixed it all together. The polock in me is LOVING IT! : )

Made this tonight.....kept it pretty much similar, except I didn;t add ground beef. It doesn't need it....Oh, and I added Carrots....more for color, but they're perfect in it. Will be saving this for the future!!!!!

Chicken Florentine Casserole

You MUST MAKE THIS!!!!!!!! Whether you follow the recipe exactly (which I've done) or change it up, you will NOT be sorry! It's so good!!!!!! The 2nd time around, I used fresh spinach, cheese and REAL BACON crumbled up. It is oh so good......served it over penne pasta! YUMMMMMM!!!!!

YUMMY!!!!!!! I made this tonight and it didn't disappoint me! I left out the green onions and lemon pepper seasoning (personal preference) but kept all the rest the same. Will definitely make again!

Bubba's Jambalaya

Made this tonight. I really liked it. I used my own broth (chicken only), forgot the bacon by accident and threw everything except the rice in the crock pot for the day (shrimp last 20 minutes). I made rice on the side. It was excellent!!!!!!! Now.....I can freeze the leftovers w/o rice and not worry about the icky textured rice when defrosting! Thanks for the recipe!!!!

Broccoli Cheese Soup

This was FANTASTIC!!!!!!!!! I did add fresh garlic when the onions were cooking and also added the white wine and mushrooms, but other than that, I left it as is and I am MORE than happy with the recipe! I will be making it again soon!
