Being the mother of an active teenage girl, I hear this everyday! The biggest complaint from my daughter is that she is starving at school, hours before lunch time. Of course, a big breakfast is not something she wants at o'dark thirty in the morning. I have been trying different things for breakfast to help get her through to lunch, without "starving".

She loves the yogurt and fruit smoothies I sometimes make. Breakfast burritos or scrambled eggs are good too, but I wanted something new to fix for her. Yesterday morning while she was getting ready for school, I scoured the fridge for ideas. I saw one lone al fresco® Sweet Apple Chicken Sausage, waiting to be used up. I had a couple of apples and of course, always cheese, bread and eggs. I also had less than 10 minutes to get breakfast ready. I was thinking about a grilled cheese, french toast and monte cristo sandwiches, and got started.

I sliced the sausage lengthwise, as thinly as I could, and sliced the apples 'on the round' thinly. I layered those with some thin sliced cheddar cheese onto bread that I had spread with a bit of dijon mustard. After pressing down on the sandwich to compact it, I dipped it in beaten egg and fried it up in melted butter until it was golden brown and melty gooey inside. She loved this breakfast sandwich and it helped to hold her over to lunchtime.

Serve this sandwich with a banana or other fruit and it makes a quick, hearty breakfast, it can even be wrapped up and taken 'to-go' style. This sandwich would be good as a soup and sandwich easy supper. I’ll be experimenting with different combinations using some of the other flavors of al fresco® Sausages. If I hit upon something special, I’ll be sure to share!

I love a fast meal, whether it's for breakfast, lunch or dinner. This sounds fantastic and my picky husband may even enjoy this. Thanks for the idea! Great blog BTW!

About Me
My adventure in cooking began when my mom gave me the Betty Crocker Boys and Girls cookbook when I was 7, I would read it cover to cover and try out the recipes whenever Mom was willing to help me. I still have that battered old cookbook, and my daughter's first cooking attempts were inspired from those same recipes. She is a teenager now, and I love having her cook with me in the kitchen. I am happily married, entering my 34th year as an RN, and work part-time at a local hospital. Oh... I love my dogs, my horse and..... my chickens (they bless me with plenty of fresh eggs every day)!!
My favorite things to cook
Anything ethnic, soups and stews, spicy and highly seasoned foods and the tried and trues that my family loves. I also love to do desserts and that is what I am usually asked to bring to pot lucks.
My favorite family cooking traditions
Having a family dinner is our most important tradition in general but there is always Jambalaya on Fat Tuesday, shrimp scampi with homemade fettucine every Valentine's Day, cheese fondue on special occasions, Black Eye Peas on New Years and the dozens upon dozens of Christmas cookies!
My cooking triumphs
No doubt the Frozen Grand Marnier Souffle I made for a Christmas Eve dinner when I was 19! So scrumtious and pretty too!
My cooking tragedies
Eggplant Parmesan..a big gooey mess and why did I try??? I hate eggplant!
