Let's Celebrate Summer

When I think of summer, I think about the heat. I live in Alabama and boy is it hot!! Today the temperature hit a high of 104 degrees and that wasn't even the heat index! Needless to say we ordered pizza today. lol. It was way too hot to cook!! This month we have been using our propane grill more often when making dinner. We did use the oven and stove a few times but not for very long!

Our garden has been producing vegetables like wildfire. We have had so much squash and zucchini we've been giving it away and also freezing it. My garden is approximately 15' x 19' in dimension and full of vegetables. We are growing above said vegetables and also okra, tomatoes, eggplant, bell peppers of all colors, lima beans, and also green beans. We alternate years on corn and this is our off year. Since AllRecipes has so many different recipes covering the types of veggies we have, we don't get tired of using them.

Celebrating summer hasn't been hard with all the outdoor cooking and finding ways to use our garden vegetables. This month we tried the following recipes:
Watermelon Sherbet
Squash Casserole II
Fried Yellow Squash
Chef John's Asparagus… Souffle
Nicki's Summer… Strawberry-Rhubarb Pie
Garlic Steak with Garlic
Grilled Garlic Parmesan… Zucchini
Crab Linguine
Creamy Vanilla Ice Cream
Chocolate Velvet Ice Cream
My Mom's Raised Doughnuts
Cherry Cheesecake… Frozen Yogurt
Hot Pizza Dip
Crescent… Bacon-Cheddar Pinwheels
Classic Waffles (I added cinnamon, halved the recipe, and crushed up 4 sausage patties in the batter)
All of the recipes listed above were amazing and I would highly recommend every one of them. I don't know how I got so lucky this month but it all worked out beautifully.

Now that the month is coming to a close I am submitting my monthly activities as an AllRecipes.com AllStar and thinking intensely about what I will make for the 4th of July and whats to come of our trip to Seattle to tour the AllRecipes Studio. Stay tuned and I will catch you up on both!
