Fresh Rhubarb Pie
Rhubarb does not get ripe. You can use the stem if it's only a few inches long. That way you can have rhubarb pie in March if the weather has been favorable. Also, it should not be harvested after July. It needs the rest of the summer just to itself. I once gave a neighbor a big armful of rhubarb in July, and the plant was dead the next year.

Stuffed Bell Peppers
I make these a lot, using brown rice, and half peppers as is shown in the photo. I put half a pepper in a small oven proof dish, and make as many as needed for that meal. The filling keeps very well in the refrigerator or in the freezer, and the peppers keep in the refrigerator for several days. If I put the peppers in the freezer, they come out mushy, but I just pile the filling on top and they taste fine. Just not as crunchy as a fresh pepper would be.

Linda's Lasagna
If you have kids, (or not so small kids) that don't like chunks of onion in anything, put the tomato sauce in the blender. Add the onion, and while you're at it add some celery and sweet peppers, (any color) and blend. They'll never know.
