Health Nut Blueberry Muffins
I was missing many ingredients and they were still good. I had only white flour and sugar and 1percent milk. I did add some nutmeg and my son and mom loved them. I used 1cup of oatmeal because I didn't have wheat germ or bran.

Basa Fillets in Tomatillo Sauce
I already had cooked rice on hand so this review is for the fish. I had catfish fillets which worked well and I had a green tomatillo salsa that I used with a few dashes of El Pato jalapeno sauce for a kick. So my recipe was quite simplified but I think very yummy. My husband was skeptical because he only likes catfish after it has been breaded, but he said it was good. I still think there could've been a few more flavors???

Strawberry Cream Cheese Cobbler
After reading other reviews I only used 1/4 cup butter and 1/2 cup of sugar. I added 1 tsp of vanilla. I also substituted 1/2 of whole wheat flour and 1/2 white. Tasted yummy to me and my mom and son really liked it. I think 1/2 cup of butter would've been way too much. Next time I will add more fruit. I was pressed for time so I threw my butter in the pan and put it in the oven while it was pre-heating. I put the dough in the oven to start cooking while I prepared the strawberries. I was able to take it out after 30 min. and take it with me. Will use again. Thanks.
