Apple Butter Pumpkin Pie

This recipe is definitely a keeper. I have been the designated pumpkin pie maker in my family for about 10 years now, and everyone loved the apple butter twist last time. (My grandfather now insists I make it this way every time!) Personally I think I will leave out the nuts and streusel topping this year, and let the pie speak for itself.

Chewy Chocolate Chip Oatmeal Cookies

I just made these about an hour ago, and they turned out great! They are so soft, they almost seem undercooked at just 12 minutes, but once they sit a bit they get more firm. Like some reviewers said, I made the modification of 1 1/2 cups flour, 1 tsp baking soda and 1/2 tsp salt. I also used a mix of white and semisweet chocolate chips. Even though the recipe calls for an ungreased baking sheet, I think it would work better with a little no-stick spray. I had a little trouble there, anyway. Excellent recipe! I will be making them again. UPDATE: I had to give 5 stars. These cookies are the bomb! They stay super soft and moist. If you layer them in a container, place a paper towel between layers so they won't stick together.

Bratwurst Potato Skillet

At first, I too was a little hesitant with the soy sauce/orange juice combo for this dish, but said, "why not?" and went for it anyway. It was delicious! You don't taste what you think you would, and it creates a savory sauce for the entire meal. Great, easy recipe.

Sour Cream Coffee Cake

This is a great and simple cake that will be gone before you know it. I did what 2 other reviewers did: I halved the recipe and used a glass baking dish, which is just the option I preferred. The other change, which I feel is much more necessary, was to put 2-3 tbsp of butter on the top just as the cake began to rise. It absolutely ensured that the cake came out super moist. I will definitely be making this again.

Chocolate Peanut Butter Cookies

I omitted the chococate chips, and these cookies still came out great! They were super gooey and moist, and stayed that way for a few days in an airtight container. I may have made them too big, because they were a bit too soft, and fell apart when picked up. I think they could work much better as a bar cookie/brownie type dessert, and that is how I will make them next time.

Homemade Black Bean Veggie Burgers

These came out great, and you can customize the seasonings/spices any way you like. If using fresh veggies, you may end up needing an extra 1/8-1/4c bread crumbs to absorb excess water. So easy! I will be making these again!

Best Big, Fat, Chewy Chocolate Chip Cookie

This recipe is now my go-to! The cookies bake up huge and pretty just like promised. They can get a little harder as they sit, but an airtight container and a slice of bread will moisten them right back up!

Apple Crisp II

This sounded like a great recipe to try out and maybe take to Thanksgiving dinner. I just pulled this out of the oven. The taste is great. I cut the recipe in half, but left the original topping measurements as others suggested. I also used much more cinnamon and nutmeg, and added a tsp of vanilla. Pros: Good flavor, looks pretty. Cons: Could use less water and oats next time. Maybe as it sets the water-glaze will thicken. This is almost too much topping for my taste, and for my 8x8 pan. I realize a lot of people do like the topping part better though, so I think this could go over well. Overall, good recipe and easily tweakable. I think I'll do things a bit differently next time if I want to serve this to company.

Homemade Mac and Cheese

This is a great basic mac and cheese recipe to have. It is easily tweaked. (I added sour cream, cheddar and mozzarella, dry mustard and some other seasonings.) I am from Louisiana and I am no stranger to making a roux, but it did give the dish a grainy, floury taste. Overall it was good, but could definitely be creamier. I'll see what else I can do next time.
