Easy Baked Tilapia

Easy! I left off the frozen veggies and just steamed mine on the stove. The flavor of the tilapia was light and the lemon gave it such a nice finishing touch. Yum! I served it with couscous.

Thai-Style Tilapia for 4

Yum! Serve over brown basamati rice for a healthy dish. Also, add 1 Tbs of brown sugar to bring out the coconut milk a bit more.

Savory Pork Chops

My family all loved this. Since they aren't mustard fans I halved the mustard parts of the recipe. I also used honey since I didn't have any marmalade. One inch pork chops worked well, just cooked them about 10 min. longer. I doubled the sauce and it was really good I did. Yum! I served it with quinoa and green beans.

Garlic Kale

I had to cook the kale for about 15 min. before it wilted enough for it to be chewable even after adding chicken stock and covering it to help steam it after the initial 5 min of sauteing. The garlic helped the flavor (which I added after 5 min like others suggested) but in the end my family didn't like it though I felt it was ok.

Gisela's Butternut Squash Soup

Very easy to make. I used 1/4 c. oj but should have made it 1/3 c. since I couldn't taste the orange much. It was flavorful and totally comforting especially on a cold wintery night.

Alysia's Basic Meat Lasagna

This was very yummy! My husband and teenagers gobbled it up. I did put an extra 1/2 jar of sauce as people recommended. I also just cooked the meat, onions and garlic together then added the sauce ingredients. The amazing thing for me was to precook my noodles or not since nothing is mentioned in the recipe. In the end, I did not precook them and cooked the lasagna for 45 min. covered and it was perfect. I also split the recipe into two 8x8 glass pans so I could freeze one.
