I'm a cook who never liked to cook until I was out on my own. Than I decided that if I wanted to eat well, I had better try and cook well.
My favorite things to cook
I love cooking with alcohol! And that doesn't just mean I get drunk in the kitchen! Baking pies from scratch can be fun, as well, though I'm still practicing.
My favorite family cooking traditions
Slow cooker soups after halloween trick-or-treating. And my dad's pastries christmas morning while we open presents.
My cooking triumphs
My Very first pie, which came out beautifully and contained the brandied apples I'd canned beforehand. I wasn't sure if the apples would work as a filling, but got lucky!
My cooking tragedies
My first attempt at boston baked beans. Total disaster. I didn't notice that I had knocked the oven temp from 350 to 500 (and broil instead of bake!) The whole pan was a burnt mess.

Breaded Hamburgers
These were delicious! They turned out so juicy and with a really great onion flavor from the baking. The onions from the bottom of the pan make a great topping for them, too. I didn't change anything and I don't think I ever would. This one is great as is!

Cheryl's Spinach Cheesy Pasta Casserole
All I can is that my husband who HATES spinach ate this dish and even went back for seconds! The only thing I changed was the sauce. i used a package of basil tomato seasoning, a jar of diced tomatoes and a small one of tomato paste. So the sauce had a slightly different consistancy, but it was still good.

Okra, Chicken and Rice Casserole
I wasn't sure what to expect when I made this, partly because I had never had okra before in my life. it turned out really good. The chicken, espcially, was nice and tender. The only reason I rated it 4 instead of 5 was because I had to substitute cayenne for the paprika, so I can't gauge how it was supposed to taste. The cayenne was still good, just a bit on the spicier side. I also added some other frozen veggies that I had, along with some canned corn, which I think added some nice texture. One thing I will say is if I make it again, I won't use white rice instead of brown. Some it it was still undercooked when it came out of the oven.
