Country Apple Dumplings

This recipe was a huge hit at the last family gathering. Both my Mother and my Grandmother asked me for the recipe! After a few trials I've found that the key is to 1) coat the apples in cinnamon and sugar before wrapping 2) Use 2 parts white to 1 part brown sugar in the sauce. simmer until it makes a thick, rich caramel and pulls away from the side of the pot. then add 1 tsp. vanilla along with the cinnamon. With these tweaks the dumplings were not soggy at all as some reviewers had mentioned. Thanks for the great post!

Delicious Ham and Potato Soup

I love this recipe! It's great as is but whenever I buy a bone-in ham I make a stock from the ham bone and use that instead of the water and chicken bouillon. I just roast the bone in the oven for an hour and throw it in the crockpot with onions, carrots, celery, s + p and water. It's best if you let it simmer overnight. Using the homemade stock I find that I don't need any other flavors or seasonings and it's always a HUGE hit. Thanks for the great recipe post!

Cabbage Rolls II

I have tried this recipe exactly as written as well as tired it with a few of the modifications that were suggested by other reviewers and I just can't bring myself to like it as much as other cabbage roll recipes that I've tried; sorry. I think it may be the lemon juice in the sauce, there was an odd tang that I did not enjoy. Great cheap and easy meal idea though!

Stuffed Green Peppers I

I followed a few of the suggestions of the other reviewers and added 2 chopped chipotle peppers, oregano and a tsp. low-sodium taco seasoning to the tomato mixture. I also pre-cooked the rice in beef broth, added garlic to the sauteing onions and added corn, peas and carrots for some extra veggies. I mixed in sharp-cheddar and topped with a slice of monterey jack cheese. Hubby says he'd eat them again and he's a meat and potatoes kind of guy. I gave it a 4 as I think it would have been a bit bland without the other additions. Thanks for the recipe!
