Cathy's Version of Brooklyn Diner Coconut Cake

I love anything with coconut so this recipe was perfect! The cake turned out moist, fluffy and flavourful. The only thing I would change would be to add grated coconut in the cake. I followed the recipe except I had to substitute margarine for the butter because I didn't have any. I didn't add filling and iced it with white icing. Delicious!

Frank's Favorite Slow-Cooker Thai Chicken

I tried this recipe the other night to try out my new slow cooker. The chicken turned out very n tender which was great but the flavour of the rest of the ingredients was a little bitter. I thought about it and I think it was because I use only natural peanut butter (no salt, sugar) which has a naturally sort of bitter taste as opposed to say, Skippy. Because of this it wasn't my husband's favourite and I probably won't make it again. If it was just for myself I would because I actually liked the outcome but it's too much for just a single person.

Guyanese Lime Cookies

What a great alternative to the usual types of cookies we make! I came upon this recipe while looking for something to use up the limes in my fridge. I love non-traditional ingredient pairings so I decided to try it out. The only change I had to make was because I didn't have butter so I had to use margarine but they still tasted fantastic. They turned out perfectly! They have a sweetness from being rolled in sugar but a tangy bite from the ginger and lime. I am DEFINITELY making these over and over again! I served them to my extended family and they asked how I got them perfectly chewy but not too doughy. Others who commented noted that the cookies turned out hard so I took mine out early becaues cookies still bake inside for a little bit once you've taken them out of the oven. Don't hesitate to try this one!

Blackened Chicken
