Microwaved Potatoes Lyonnaise

I wasn't expecting much from a microwaved potatoes recipe, but this turned out great! I omitted the onion and doubled the garlic and all the spices except salt. Also used butter instead of margarine. Once the potatoes were fully cooked (it did take my microwave about 5 minutes longer), I stirred in some Parmesan. Yum! Easy & delicious!

Corn Chowder I

This is SO good. I made a big pot (subbing red pepper for onions, as I don't like onions) and froze most of it in individual servings. It tasted great when heated up! A filling, hearty chowder, perfect for winter. I just ran out & will be making another pot soon... I have a craving for it!!!

Ten Minute Chipotle Spiced Beef and Bean Chili

I used 2 chipotles & added a fresh jalapeno & fresh garlic while browning the beef. Used 2 cans of diced tomatoes & a can of tomato paste, 1 tsp. salt, & about 1 cup of coffee. (I like my chili a little soupier.) It was so easy & turned out delicious! My husband raved about it!

Grilled Pork Tenderloin

The pork was so tender & good. I used a mixture of Cajun seasoning, salt & pepper to rub the meat, which added a little kick. My fiance loved it, & he is usually not a big pork fan!

Ginger Pork

This recipe was easy, & so good! It had a slightly Chinese flavor, but not overwhelmingly so. I had to add about an extra cup of water as it simmered, which left me with plenty of good sauce.

No Roll Pie Crust I

This recipe is AMAZING! I've always made my crusts with butter and/ or shortening, so they were fairly time-consuming & difficult to work with. But I whipped this crust up in 5 minutes, & it was delicious-- flaky, tender, & crisp (my pie crusts have tended to be soggy). I'm so glad I discovered this recipe at the beginning of summer so I can use it for all my fresh fruit pies!!

Herbed Batter Rolls

These were good, easy rolls... nothing spectacular, but definitely a good recipe to have around when you want to whip up some quick rolls for dinner. I added parmesan cheese to the batter, which was very good. I just want to know-- in what world does this recipe make 8 rolls??? I made 12, & I filled the muffin cups almost to the top!!

Greek Chicken Pasta

This was quick, easy, and filling. After reading some reviews about dryness, I added a can of diced tomatoes, which really helped. It was not quite as flavorful as I like, though... something's missing, but I'm not sure what!

Broiled Chicken with Roasted Garlic Sauce

I used this recipe as a starting point for a really yummy dinner-- I don't care for broiled chicken, so I marinated my chicken in white wine & garlic and grilled it. I also added white wine to the sauce with the milk. Served with pasta and broccoli w/ sauce overall. The roasted garlic has such a good flavor! The sauce also reheats well, which is rare for a cream sauce.

Mmm... these are very rich & delicious. I find it's better to either double the chocolate mixture or halve the cream cheese mixture-- these work best with just a dab of cream cheese.

Turkey Sausage Noodles

What a yummy, quick, filling dinner! I used one packet of spicy Ramen flavor along w/ one packet of chicken, omitted the onion, & used mixed veggies instead of just peas. MMMM!

Asparagus Ham Dinner

This is a very good, flavorful recipe. It takes a while to cut up all the veggies, but it's worth it! I used prosciutto instead of ham & added extra parmesan, which really gave it a good flavor. Also good as a cold pasta salad!

Pasta With Peanut Sauce

If you like peanut sauces, this is perfect. I used more garlic & called for, and it turned out beautifully. I also made this a delicious vegetarian dish by eliminating the chicken & using a bag of frozen stir-fry vegetables. It was so flavorful, I didn't miss the meat!!

Chicken Saltimbocca

This was good, but almost too rich for me. I would use less butter, or maybe use olive oil instead. It was hard to handle the prosciutto- topped breasts. I had to turn them upside down in the pan b/c they weren't cooked through, but they were starting to burn on the bottom. I also rubbed the chix breasts with sage before frying-- added great flavor.

Eggnog Fudge

I love eggnog, & I loved the flavor of this fudge! It was great for Christmas-- I had more than 1 person tell me it was their favorite selection from my cookie plate. But it did turn out a little grainy & too soft... although the recipe does not call for a candy thermometer, I would suggest using one anyway to get the best texture.

Norway's Best Pepper Cookies

I really liked this cookie-- good tasting, easy to make, and a little different. I used coriander instead of cardamom (long story!) but next year for Christmas, I would like to make them as they were originally intended.

Gooey Cherry Bars

Mmmm... I saw this recipe & just had to try it... I'm glad I did. Maybe these weren't the prettiest cookie on my Christmas plates, but they were one of the tastiest! They are time-consuming with the different steps, but well worth it.
