I work on wall street during the day, in the evenings my attention turns to beautiful friends, and wonderful cooking.
My favorite things to cook
I love to cook beef, all types of beef , most loved , NY Strip, or a fine Dry aged filet.While finishing these most tender cuts of beef. I enjoy trying various Demi -Glacé recipes usually french butter based. I also enjoy preparing various complements that will share the plate. Smooth as velvet garlic mashed potatoes, or a turnip potato mix, with a silk smooth, gravy. And vegetables of all types, usually a variation of asparagus ,carrots, ect.

A wonderful 16 oz. dry aged NY Strip , finished with a great Bordelaise sauce,complemented with a bed of Yukon gold mashed potatoes, and asparagus covered with a cheese sauce.

Learning how to cook steaks using the sear / roast method.
Had outcomes of many a dry tough steak! Defiantly something that needs correct , "Time , Love , and Tenderness " well I think I finally have it!
It's amazing how once you really succeed in creating a meal loved by all that enjoy it , it's tough eating the same thing out anymore, without saying to yourself , you call this WHAT !
