About this Cook
Single dad with three awesome children. We love going camping, dirtbike riding, the beach, mountains, river. Basically, we love the outdoors! Our children are my life and I love every minute with them. I am somewhat new to the kitchen, but love making meals for the kids.
My favorite things to cook
Pot roast (its so easy), BBQ - steaks, ribs, chicken. Love the pulled chicken BBQ sandwiches we had recently. Also, love a chicken marsala I make. The pies and cookies we bake for the for the holidays go over well with all our family. They have seen me go from never cooking to cooking several times a week for the kids and I.
My cooking triumphs
My kids like a chicken torilla soup that I make with our VitaMix Blender, I know sounds gross, but it's actually the bomb! Best of all it has all kinds of veggies and the kids love it!
My cooking tragedies
Our broken down kitchen, makes it very diffiocult to cook. I have to use a small micro/convection oven to cook and bake. We could really use a make over! As far as cooking mistakes, I sometimes burn the steaks outside!

Slow-Cooker Chicken Tortilla Soup
Loved this receipe, have to admit I'm not big on canned food to make meals but, this served such a good purpose, it allowed me to rotate and use some of our older cans. I added a bit of Queso cheese, used both diced can of tomatoes and sliced stewed tomatoes. I increased the servings, added some brown rice, black beans, bag of corn, fresh cilantro, basil. I like my soups hearty and I read a few reviews that stated the recipe was a bit watery (not for me). I added a total of 3 lbs of chicken, 1 large breast was cut extremely small which helped to thicken the soup. Just used store bought tortilla chips due to time contraints, but I'm confident it would taste a bit better if you take the extra 10 min to make some. Will make again!

Marinade for Steak I
Worked pretty good, but I dont recommend leaving too long to marinate, like overnight is just too long., We use thgis all the time though.
