Salsa Chicken Burrito Filling

We absolutely loved this! I made it just as described and I would not change a thing except maybe make it in a crockpot. After only 20 min. of cooking as directed, the chicken doesn't really shred that easily. So next time in the crock pot it goes. I added one more chicken breast but didn't increase the size of other ingredients. This made 6 huge burritos but I also added refried black beans to the burrito so it took a bit less chicken. Individually wrapped these and tossed in freezer for lunches for my son this week. He is pretty stoked! Delicious!!! (thankfully there is extra sauce left after removing/shredding the chicken - we used it to top other entrees such as tamales! Yummy! Don't toss the extra sauce!)

Red Pot Roast

I made this tonight with a good chuck roast; put the carrots in but baked the potatoes. I kept it covered and had lots of sauce. My son commented that he really liked the sause; it tasted like a sweet BBQ sauce. For me, the sauce was good on the meat but too ketchupy for a gravy. I don't think I would make this again.

Yummy Honey Mustard Dipping Sauce

I made this for chicken nuggets sort of last minute. Even though the recipe says to let it chill in fridge overnight, we ate it within an hour of making it, and it was still good. Probably even better today; this will be my go-to honey mustard dipping sauce recipe. It is exactly what I was looking for.

Ronaldo's Beef Carnitas

I have been searching for a great and easy recipe to use to make a good filling for a shredded beef burrito. This was it! This was incredibly easy and everyone in my house just loved it! I made no changes to the recipe, although I'm sure it would work fine using a crock pot instead of the foil, too!

Persimmon Bread II

I have never had persimmons until a friend who had a tree brought me some. I had no idea what to do with it. I froze the pulp so I could investigate on what to do with this strange orange stuff! This bread is fantastic! It is super moist and tasty. The spices are just right. Only had one problem and that was getting out out of the bread loaf pans. Doesn't matter if it's glass or metal pan. I will try greasing them better next time and maybe even add a touch of flour to the bottom of the pan. Regardless of a few pock marks on the bottom of my loaves, it is DELICIOUS! ADDENDUM: I solved the sticking on bottom of pan problem with parchment paper! It worked great and I use it in glass, metal, or even the throw away foil pans. I bring it up on the sides a touch, too. The bread still browns nicely! (If you use the fuyu persimmons, the stickiness is not a problem - I learned that this year 2014.)

Chicken Casserole Del Sol

This recipe was so easy to make and everyone in my family loved it. My son does not like green beans but he didn't even pick them out when eating this casserole. The mixture of mayo, lemon juice, and curry made for a delectable flavor! I would not change a thing!

Barbequed Thai Style Chicken

This tasted just like my husband's favorite entree at the Thai restaurant we frequent. The flavors are outstanding. Used the leftover chicken to add to a salad. Delicious!
