North Carolina-Style Pulled Pork

Having lived in NC for a few years, I felt like a native once I had tasted this recipe!!! Many thanks to Doug for our Superbowl fare recipe! I used the suggestions of liquid smoke (as I had to roast mine also), increased the brown sugar (but not by much! ) and kept the red pepper the same as Doug had. A little kick, but almost as good as Lancaster's BBQ - the standard in my area of NC. Loved it!

Italian Torte

Thanks for your recipe. I had nearly the same recipe from Southern Living and when I went to make it (after buying all the stuff) the recipe made no sense - no layering (even though the picture showed it was clearly layered!) Their directions said to process everything all together and put it in a loaf pan! I thought - there is no way that is right!!! You saved the day Elaine! Grazie!

Creamy Chicken on Linguine

Excellent flavor! I would give it 5 stars but I had to use the ole' flour/water thickener trick. Not a big deal. My husband and I thought that it was so good we would put it on our list of "company food"! I also added garlic, and sprinkled the chicken with some Tony Cachere. Thumbs way up!!

Pancakes I

Good taste, although mine, too, were flat and rubbery. If you like a thick, spongy pancake (like me) this is not the recipe for you.

Extreme Banana Nut Bread 'EBNB'

Very good , and yes, very addictive. I used butter and half brown/half white sugar. You can fell the sin. I was also put off by the dark color of the bread, but once you take a bite you won;t care.

Pumpkin Chocolate Chip Muffins

These were so good! I took the suggestion of using cinnamon chips instead of choc - wonderful! What a great way to get pumpkin (an amazingly healthy food!) into your diet! My kids love them!

Pomegranitini

What a great drink!!! I only put about 1 oz. of Cointreau in mine since others said that it turned out too sweet. I thought it was fantastic - and the health benefits of pomegranite juice are so unbelieveable that this has become my favorite - ahead of the ever-popular cosmo. Cheers!

Ranch Burgers

very tasty. If you are not an onion fanatic, maybe saute the onion ahead of time before adding to meat. My meat was very lean and there wasn't a lot of grease flowing to help soften the onion and they were a little raw for me. Very good all around. (although high in sodium)

Salmon in the Dishwasher

Unbelieveable! This really worked great! I seasoned mine a little differently and it was perfectly cooked, no mess!!!!! I had made a salad, put it in the fridge, ran the dishwasher, put the kids to bed, came downstairs, pulled the foil out (perfectly dry/not drippy/messy), cut the foil, pulled out the fish, plopped it on the lettuce, and had an excellent meal. GREAT CONCEPT! Many thanks, I will try this again and again!

Great taste!!! Be careful not to cover the pan or the topping after you make it because it will get too soft and not streuselly. IT was a good dessert!!!!!! Everyone loved it !

Very good tasting stuffing! I loved it. The only note that I wqould make is to add some broth for sure before baking (or maybe even a beaten egg?) because mine didn't stick together at all (it was really loose)

Cube Steak Parmesan

Easy Toffee Bars

Have made this recipe for 2 years now after failing at traditional toffee recipes. I love it. So does my husband and neighbors. The changes that I made are this - I make sure that I boil the sugar and butter for a few minutes until it starts to darken and morph into a pre-candy stage. Also, I cook the whole thing for 8 -10 minutes before adding the choc chips. Then I just pop it in (even with the oven off) to melt the chips. I burnt it the forst time that I cooked it for 5 minutes. Too hot for chips at that temp.. It does take a while to set. I always put mine in the garage or porch (in the winter). IT will help speed the process. Not the real thing, but close with tasty results!!!!!!!

Salmon with Dijon Cream Sauce

I cooked the salmon differently, (see: salmon in the dishwasher - great method!) But the sauce I tried. Was not impressed. Like the others, I reduced the flour and it was still way too thick. Tried adding more half and half. The flavor was not there, tried more mustard, tarragon, etc. Not a success. I almost hated the thought of putting it on my very precious and costly wild salmon fillets. My husband did like it, but I would look elsewhere for a creamy dijon sauce, sorry!

very good recipe! My husband, who normally doesn't like marsala, thought it was great! So did I! Just be sure to pound all veal before breading so that it will truly be tender!

Wicked Garlic Tofu Saute

If you like tofu, this is a great dish to try because it has great flavor! Try and use the firmest tofu that you can get,is my advice. Also, I minced my garlic (all 6 cloves - wonderful!)
