Blueberry Cream Muffins

good muffins, although i added some lemon juice/zest. (I think it is always a complement to blueberries and necessary for depth of flavor). beautiful looking - a big hit!

Connie's Zucchini "Crab" Cakes

strangely good, although it is not exactly the same as having big hunks of crab in a cake, but if you normally buy the cheaper stuff that is so fine, you will not miss the crab and also save some dollars!

Zucchini Pie II

This pie is really wonderful and tastes exactly like apples!! It is almost like a fun prank to pull on people when you tell them it isn't apples - they will not believe it! I decreased sugar to 1 cup and added at least 2 more cups of apples and it was perfect!!!

Antipasto Squares

Yum Yum Yum!!! Everyone loved these things! I, too, used capicolla and mozzarella instead of reg ham and swiss. It was great. Mine didn't get too puffy and I also cooked mine a bit longer after removing the foil. Great recipe- will definately make for my future events.

Pure Irish sin...wonderful and bad a the same time. Made it with our corned beef on St. Pats Day - we loved it. It is not for the calorie conscious, but it is heavenly.

Golden Yam Brownies

What a great flavor and so nutritious! I think that it could use a different name than "brownies" since they aren't brown and don't even come close to tasting like a wonderful, chocolate brownie. But they were great and actually tasted like a nutritious cousin of the Tres Leches cake, esp when warm. would make again and again - perfect for kids to eat their veggies!

Wicked Garlic Tofu Saute

If you like tofu, this is a great dish to try because it has great flavor! Try and use the firmest tofu that you can get,is my advice. Also, I minced my garlic (all 6 cloves - wonderful!)

Salmon with Dijon Cream Sauce

I cooked the salmon differently, (see: salmon in the dishwasher - great method!) But the sauce I tried. Was not impressed. Like the others, I reduced the flour and it was still way too thick. Tried adding more half and half. The flavor was not there, tried more mustard, tarragon, etc. Not a success. I almost hated the thought of putting it on my very precious and costly wild salmon fillets. My husband did like it, but I would look elsewhere for a creamy dijon sauce, sorry!

Easy Toffee Bars

Have made this recipe for 2 years now after failing at traditional toffee recipes. I love it. So does my husband and neighbors. The changes that I made are this - I make sure that I boil the sugar and butter for a few minutes until it starts to darken and morph into a pre-candy stage. Also, I cook the whole thing for 8 -10 minutes before adding the choc chips. Then I just pop it in (even with the oven off) to melt the chips. I burnt it the forst time that I cooked it for 5 minutes. Too hot for chips at that temp.. It does take a while to set. I always put mine in the garage or porch (in the winter). IT will help speed the process. Not the real thing, but close with tasty results!!!!!!!

Wow! This tasted great (my kids loved it!) and is a much more affordable option to veal parm. I used Ragu instead of making my own sauce and it was just great too. Thanks!!!!

Potato Sausage Stuffing

Very good tasting stuffing! I loved it. The only note that I wqould make is to add some broth for sure before baking (or maybe even a beaten egg?) because mine didn't stick together at all (it was really loose)

Great taste!!! Be careful not to cover the pan or the topping after you make it because it will get too soft and not streuselly. IT was a good dessert!!!!!! Everyone loved it !

Salmon in the Dishwasher

Unbelieveable! This really worked great! I seasoned mine a little differently and it was perfectly cooked, no mess!!!!! I had made a salad, put it in the fridge, ran the dishwasher, put the kids to bed, came downstairs, pulled the foil out (perfectly dry/not drippy/messy), cut the foil, pulled out the fish, plopped it on the lettuce, and had an excellent meal. GREAT CONCEPT! Many thanks, I will try this again and again!
