Spicy Lime-Cilantro Marinated Flank Steak

I didn't add a red onion and I didn't have time to marinate it overnight (only for about an hour and a half) but it was delicious. Everyone loved it, kept walking back past the plate to pick up another piece. Rave, rave reviews. I put all the marinade in the bag with the steaks since I had limited marinade time.

Black Bean and Corn Salad II

I don't measure when I cook, but I used all of the suggested ingredients except the green onions because I was serving it to 3-5 year olds in addition to adults. Loved by all. I did add the cilantro. I used fresh corn, approximately 6 ears, that I boiled for 1-2 minutes then rinsed with cold water and cut from the cob. Wonderful for summer. Very colorful. I also used a pint of grape tomatoes that I sliced in half.

Delicious Ham and Potato Soup

This was a delicious soup. I cooked the potatoes in a quart of chicken stock instead of the water + bullion and I used 1 cup of 1% milk and 1 cup of whole milk. I didn't have an celery so I used 2 small carrots instead. I mashed the potatoes slightly before I added the white sauce. I added some frozen corn right at the very end of cooking. It was really, really tasty.

Mini Southwestern Corn Pup Muffins with Fiesta Dipping Sauce

I used a "flax egg" instead of a regular egg since I was out (1 T ground flax seed & 1 T water) and less sugar than called for (~1//4 cup). It still turned out great and my kids liked them. I found the mini muffin tins took 10 minutes to cook and the regular muffin tins took almost 15. We just dipped ours in ketchup.

Homemade Black Bean Veggie Burgers

I hate when people do this, but I made a few (minor) modifications. I used red bell pepper instead of green, I cut back slightly on the spices so I could add about a teaspoon of smoked paprika. And I left out the hot sauce because toddlers were eating this. I served mine bun-less over arugula with some fancy country ketchup on top. Divine! My husband didn't know it wasn't meat until I told him.

Ninety Minute Cinnamon Rolls

I didn't have enough brown sugar for the filling so I substituted with part white sugar and these still came out great. I also cooked them in a 9x13 pan. Mine were still done in just about 20 minutes.

J.P.'s Big Daddy Biscuits

These were so good. I modified the recipe some-used butter instead of shortening and didn't end up needing all the milk (butter has more moisture in it than shortening). I used this as a topping for a pot pie (wonderful) and the leftovers I cooked as just dropped biscuits and it worked out fine. I cooked the pot pies (individual ones) for 15 min at 375 F and the biscuit topping was cooked perfectly (my filling was already cooked separately).
