Janet's Rich Banana Bread

This is the best banana bread I think I've ever had! Moist and dense ... perfect. The first few times I made it, I followed a reviewer's suggestion to cream softened butter with the sugar, but last night I made it as directed with melted butter. I left out the nuts since my family doesn't like them, and I did mash the bananas rather than slice them. I just now had a piece this afternoon, and it was delicious.

Broccoli Cheese Soup V

I had some leftover steamed broccoli florets and garlic red-skin potatoes in the fridge and decided soup was the best way to use them up. I read a few recipes on this site and chose this one; I liked the idea of cooking the flour into the onions rather than adding it (or cornstarch) later with liquid. Since my broccoli was already cooked, I didn't simmer it in the chicken broth separately; I slowly added the broth to the thickened milk mixture then added the chopped-up broccoli once that was warmed through (along with my leftover potatoes). Seasoned with lots of pepper after I stirred in the cheese ... delicious. I think next time I will try it with a combination of Velveeta and cheddar, as some reviewers have suggested.

Creamy Caramel Flan

So delicious! Brought it to a work potluck, and my coworkers loved it. A few mentioned that they liked it better than the traditional (read: eggy) flan. I used the ingredients as listed; even though I had read the reviews about using a blender, I thought, "Surely my trusty Kitchenaid mixer will make it smooth." Nope ... I ended up pouring it into my blender;. the cream cheese would not blend in otherwise. I realized when I was pouring the custard into my pan that it was too small, so I made one 8" and two little custard cups. I will buy a 10" round pan just to be able to make this again! A delicious and beautiful dessert.

G's Tres Leches Cake

I've had another recipe from this site printed and ready to go for about two weeks. It had hundreds of reviews, but for some reason, at the last minute, I had second thoughts and decided to look around and settled on making this one instead, even though it had only a handful of reviews. I'm SO glad I did! This cake was fabulous!! I'd never made it before, so I was a bit nervous to bring it to a work potluck, but everyone who tried it loved it. I made only two minor revisions - I used vanilla extract instead of almond (daughter has an almond allergy) and used powdered sugar in the whipping cream just because that's what I always use. Followed the directions otherwise exactly as written. Success! Looking at how the measurement of ingredients differs in this one so much from the one I was going to try, I can't even imagine how the other one could work out.

Buttercream Icing

I used to make either an all-butter buttercream or an all-shortening fluffy white frosting, depending on what I was using it for. Now, it all will be this recipe, with half of each. DELICIOUS! I follow the recipe as written, and use it all the time.

Slow Cooker Mongolian Beef

I loved this ... my family didn't, which is a bummer. I thought the flavor was very good. I don't think my kids were fond of the hoisin. I ran out of time in the morning, so I just stuck a "london broil" cut in the crock pot whole and covered it with the ingredients. It cooked on low for about 9 hours. I couldn't even pick the meat up to cut it, it just fell apart. I said that I wished the sauce had been thicker, but then remembered that I was supposed to have coated the meat in cornstarch first. Duh. Anyway ... I enjoyed it. Served it on brown rice with chopped broccoli and julienne carrots.

Ham 'N' Cheese Quiche

Loved this recipe ... so easy and delicious. My eight-year-old son gobbles this up every time I make it. The only thing I did differently is use a bit of onion powder instead of the dried minced. Thank you!

Herb Rubbed Sirloin Tip Roast

Delish! After disappointing my family time and again with dried out roasts from the crock pot, I decided to try this one. I didn't use cayenne and I cooked it on a rack like another reviewer did, and it turned out as a juicy, perfect medium rare. My kids loved it. Will definitely become a part of our recipe box.

Banana Crumb Muffins

Delicious! My kids love banana bread, and are always happy to see dark bananas left over on the counter. I tried these for something different, followed the recipe as is, and they were a huge hit. I'll be making these instead from now on. The topping is just the right amount of extra sweetness and crunch.

Old Fashioned Coconut Cream Pie

I followed the advice of the reviewers who used the microwave; I was skeptical at first, especially since after the first three minutes the custard was still very liquidy. It took an extra minute, but it was perfect. What a pleasant surprise - thanks for sharing the tip! I tasted a slice before it had completely chilled - mistake. Now that it has chilled overnight, it is wonderful - perfectly sweet and creamy (before it had thoroughly chilled, it was eggy and not very sweet). Topped with real whipped cream, and I used cornstarch and a coconut flavoring in the milk. Next time will use 1/2 coconut milk, 1/2 half-and-half as was suggested; the flavoring left a slight alcohol taste. Fantastic recipe!
