Easter Grain Pie

A big tradition in a Neapolitan house. Expensive if you can find it in the bakery. The first time I ever had Easter "wheat pie" I had no idea of how to make it or how to prepare the wheat berries, so guessing, I used shredded wheat! It tasted the same. Make sure you really cook those wheat berries if you use them. Hard berries ruined my next try!-I think I'll use my presser cooker to cook the wheat.

Cheese-Filled Coffee Cakes

Easy, I was looking for a basic sweet dough that was easy to prepare. Make sure you start out right and don't kill the yeast with too warm of ingredients. Hate mixing doughs and don't want to bring out the mixer? I use a butter knife for a dough hook to stir with-no mess. I'm on my second rise right now. 2 coffee cakes, 1 cream cheese and one fig filling leftover from my cucidata cookies. I made cuts on top with kitchen scissors before rising. Should be a winner!
